All three breweries involved in the collaboration ferment their beer with unique blends of yeast and bacteria. In the case of Jester King, all of our beer is fermented with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. We brewed our version of Cerveza Sin Frontera at our brewery in October 2013 with the help of Chad Yakobson of Crooked Stave and Raphaël Mettler of Trois Dames. The wort, brewed with Hill Country well water, barley, wheat, oats, and hops, was initially fermented in stainless steel for three months, then refermented in Spanish sherry barrels for twelve months, and finally refermented in bottles, kegs, and casks for three more months.

750mL bottle, pours a hazy bright amber orange with a small white head. Aroma brings out various yeast types, with some tart fruits, a floral quality, and earthy sweetness. Flavour is complex, with toasted earthy notes, some nutty quality almost reminiscent of marzipan, and some tart red fruits. What a strange beer. Seems like they just threw random shit together and wondered what could come out, then sold the result. Flavour is really poor, with lots of acetone / nail polish remover, tart fruits and malt vinegar. Lacking any complexity at all. Man, this is way off. A surprising let-down from these three breweries.

Unclear - hazy medium amber orange color with a small to average, frothy, fair lacing, mostly diminishing, off-white to white head. Aroma is moderate malty, tart fruity, barnyard notes, light wood. Flavor is moderate to light heavy sweet and light moderate acidic with a long duration, tart, dry, fruity, funky notes. Body is medium, texture is watery to oily, carbonation is soft. Draft. An amber beer with a lazing yellowish head. The aroma has notes of spices, malt, and caramel. The flavor is sweet with notes of malt, caramel, wood, and spices, leading to a tart finish.

Draught @ Mikropolis. Pours hazy burnt golden with a small creamy offwhite head that slowly dissipates while leaving some thick lacing on the glass. Smell fruity and tiny funky with sourdough crackers, lemon juice, lime juice, white grapes and raisins, hay, dry soil, minerals, moist wood, lemon zest and hints of barnyard and caramel. Taste is sour, fruity and tiny funky. Mouthfeel is crisp, dry, tart, mouthpuckering and light to medium bodied. Finish is sour with sourdough crackers, lemon juice, lime juice, peaches, white grapes, dry sherry, hay, minerals, lemon zest and hints of barnyard. Rather straight forward with a typical Crooked Stave citric acid dominance. Adds up to a great sour nonetheless but the Jester King version wins with its complexity and elegance.

Poured from a bottle shared by Travlr it is a cloudy amber color with a white head. The aroma is fermented apple and the taste is sour flavor that is hard to distinguish and I tried maybe apple cider vinegar and as reported I am not a sour beer fan.

Sampled at the Crooked Stave in The Source pours a clear orange with lots of white head. Nose has some agave, straw, white grapefruit, dried berries (strawberry), red grape. Flavor is interesting, Vitamin C and yogurt, some strawberry, passion fruit, white grape. There is an interesting sweet/white port thing happening at the end. Full, tart finish.
