All three breweries involved in the collaboration ferment their beer with unique blends of yeast and bacteria. In the case of Jester King, all of our beer is fermented with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. We brewed our version of Cerveza Sin Frontera at our brewery in October 2013 with the help of Chad Yakobson of Crooked Stave and Raphaël Mettler of Trois Dames. The wort, brewed with Hill Country well water, barley, wheat, oats, and hops, was initially fermented in stainless steel for three months, then refermented in Spanish sherry barrels for twelve months, and finally refermented in bottles, kegs, and casks for three more months.
Blend #1 was sherry barrel aged and bottled on 12.16.2014.

Clear amber to orange beer, small irregular creamy off-white head, little stable, bit adhesive. Aroma: funky, sourish, vinegar. MF: ok carbon, medium to light body. Taste: fruity start, pretty sourish, more fruit, funky, hint of vinegar. Aftertaste: funky, spicy, dry, more fruit, bit oxidized, stone fruit.

Amber and bright with a bubbly head. Aroma has sticky sherryish sugars, with a touch of bugs. Sweet - the sherry is all over this one, giving it a very different character. The malt is restrained.

Bottled, from Systembolaget. Cloudy amber, minimal head. Vinegary nose with oaky sherry, pepper and cherries. Tart with medium body and rounded mouthfeel, very low carbonation. Juicy, tart and somewhat dusty with cobwebs and grapestones. Peppery mid bitter finish. Intense, yet relaxed. Really good!

Sample at Crooked Stave. This beer pours a clear reddish-gold color with a medium thick off-white head that recedes steadily to an outer ring. Stringy lacing on the glass. Aroma of tart fruit, yeast and malt. Medium boy with flavors funky citrus, oak, herbal yeast and malt. The finis is mildly tart with a funky yeast and citrus aftertaste. Original review text: Sample at the Inventory Reduction Beer Tasting on 08/08/2015. Pours a clear ruddy orange color with a medium white head that diminishes gradually to a film. Strings of lacing on the glass. Aroma of funky fruit, yeast and malt. Light to medium body with flavors of funky apricots and peaches, oak, malt and yeast. The finish is tart and woody with a fruity aftertaste. Pretty enjoyable beer all around.

Hazy orange-ruby color with no head. Stingy infected sour aroma. Gone quickly. Taste is lightly sour, sausages, no complexity. Disappointing.

Poured from a bottle. Aroma is somewhat acidic with a light lemon note and some pineapple. Medium light sour stone fruit with some cherry, berry and prune. Light caramel malt presence with a light wine character and a bit of oak. Pours a slightly hazy, reddish copper with a medium sized, thick, slightly off-white head that recedes to a small film that lingers thicker on the edges. Medium light lacing and small legs. Flavor is moderately to fairly acidic with some light caramel and faint honey and toasted bread malt notes. Fairly fruity with light lemon and pineapple notes. Moderate grapes, figs, cherries and stone fruit notes. Light wine character with a lighter oak presence. Low bitterness. Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a pretty nice beer and probably my favorite of the batch though I still ifnd the aroma on the Trois Dames version to be the best. This version has a nice, fruity acidity that works well with the sherry barrels. Some light malt notes are also well integrated. Original review text: Poured from a 375 ml bottle. Aroma is fairly malty with some toasted bread and caramel. Medium light acidity with some moderate notes of berries and cherries. Light oak presence with some light citrus. Pours a cloudy brown with a burnt amber hue and a small, moderately thick, gan head that recedes somewhat quickly to the edges where it lingers for a bit. Light lacing and small legs. Flavor is moderately acidic with a bit of a lemon character. Medium light malt notes of toasted bread and caramel. Medium light fruit notes of berries and cherries. Medium light oak and light vinous notes. Light tannins with meidum bitterness. A little more fruit as it warms. Mouthfeel is medium light bodied and slightly watery with medium low carbonation. Low astringency and low alcohol warmth. Overall, a better beer than the Trois Dames version, but I think Trois Dames had a much better aroma and could have been more interesting. This reminds me a lot of a Flanders style sour with the fruit character and malt notes.

Keg at Mikkeller and Friends CPH, Day 3 of RBESG ’15, 22/08/15. Lightly hazed rich amber topped with a decent beige swirl. Nose is pissy, sherry notes, burnt toffee, dark fruits, light spice. Taste comprises tarte fruit, earthy. light acidic rise, dank notes, wood must, yeast esters, sherry tang. Medium bodied, fine carbonation, semi drying close. Nose is big wooded notes, tarte citric rinds, bitter orange, straw, spice, nutty, biscuit base, vanilla. Taste comprises earthy fruit, vanilla, straw, damp hay, tarte berry, citric peel. Medium bodied, fine carbonation, semi drying close with a flick of acidity. Ok but doesn’t do much for me.
