All three breweries involved in the collaboration ferment their beer with unique blends of yeast and bacteria. In the case of Jester King, all of our beer is fermented with a mixed culture of microorganisms consisting of brewers yeast and native yeast and bacteria harvested from the air and wildflowers around our brewery in the Texas Hill Country. We brewed our version of Cerveza Sin Frontera at our brewery in October 2013 with the help of Chad Yakobson of Crooked Stave and Raphaël Mettler of Trois Dames. The wort, brewed with Hill Country well water, barley, wheat, oats, and hops, was initially fermented in stainless steel for three months, then refermented in Spanish sherry barrels for twelve months, and finally refermented in bottles, kegs, and casks for three more months.

Blend #1 was sherry barrel aged and bottled on 12.16.2014.

Bottle. Pours a clear amber with a white head that dissipates to the edges. Aroma has light sweet fruits with a bit of spice, light funk and some sweet grains underlying. Flavor has light tart fruits with sweet grains and a hint of Cognac.

Danke an anstei. Süffiger, weich saurer Beginn. Spritzig, fruchtige Noten, steigende Säure. Rund, wenig bitter, langer Nachhall. 10/9/10/10/8/10

Small slightly fizzy mediumlasting head. Aroma is sour-ish sweet, sorrel, soda powder, dark sugar, caramel, oak, red berries, grass, minerals, raisins, hints of butterscotch. Taste is sour-ish dry, sorrel, unripe berries, minerals, oak, soda powder, dark sugar, raisins, caramel, bark, mild vinegar, heather, red berries. Medium bitterness, slightly dry acidic mouthfeel. Very nice. Love the tiny touch in the direction of sherry/madeira barrel aging.

plain light amber color. Very strange nose of celery, apricot and raisins with a bit of sherry. Strange oak, raisins, apricots and cherry character. Can’t get my head wrapped around this. Lots going on. Nicely made but all over the place

Tap into a taster at MBCT showing moderately filtered pale amber with sparse white foam. The nose shows moderately intense tart notes of sweet cognac and a light nuttiness throughout. The palate is moderately carbonated and light bodied. Light cognac sweetness decorated with notes of sherry and nuttiness throughout. Lightly tart and very well integrated. With more sherry on the end.

Lightly hazy, peach-copper-golden with a small, beige head atop showing moderate-to-low retention.
Sherry provides very coarse nuttiness and husk without much depth. Further breadiness ensues, from the malt, while a light amount of lactic acidity continues to keep things very "dry" in the nose. Fruitiness does perk up somewhat, as it warms and breathes, with marmalade and cherry-like notes providing some reprieve from all of these rather dull, earthy, nutty notes. No alcohol or flaw.
Extremely dry in the mouth, though with enagaging, natural carbonation somewhat ameliorating this. Again, sherry imparts little actual flavor, but a lot of dull nuttiness, with barrel tannin and lightly husky malt contributing to a very austere overall character. Mixed culture characteristics are at least pretty tame, with no sourness and only moderate tartness on the end. Competent and without any flaw, but pretty minimal on the flavor, as well. Most of Jester King's 2.5%-4.5% abv beers have twice as much character/flavor as this one.

Bottle: Poured a clear amber color ale with medium foamy head with light retention. Aroma of tart and funky notes with light touch of honey. Taste is a mix of honey and tart funky notes with subtle barrel-aged notes. Body is about average with oily texture and good carbonation. Not bad but sweeter then I had expected.

Amber colour, white head. Sour aroma, wood, raisins and honey. Sour flavour, wood, sherry wine (the light kind). Simply refreshing finish.
