KO2 fa parte di una nuova linea di birre nate da un progetto iniziato 4 anni fa di studio, ricerca e sperimentazione di nuovi lieviti adatti alla produzione di birra.
Grazie anche alla collaborazione tra Birra dell'Eremo e l'Università Politecnica delle Marche, sono stati selezionati tre "non-conventional yeast" da impiegare nella fermentazione primaria della birra conferendo al prodotto specifiche caratteristiche aromatiche e sensoriali.
Prodotta utilizzando il lievito "Kluyveromyches Thermotolerans", KO2 si presenta di colore dorato con fine e persistente schiuma bianca.
L'aroma è caratterizzato da delicate note fruttate e floreali. Al palato si percepisce un'elegante acidità che invoglia al sorso successivo.

Bottled 330ml. -from Eataly Trieste. Slightly unclear lemony yellow coloured, medium sized creamy white head, dusty grainy and herbal nose. Dusty yeasty, light spicy and herbal with mild sourish notes and soft lemony finish. Interesting one.

Huge thanks Ogi! Misty dark yellow body, lasting white head. Well, guessing this is my first beer with this yeast. Fruity, herbal and slightly grainy herbal aroma, initially sharp but quite enticing and nice. Soft, quite empty taste, grainy, flowery, ending mildly tart and citric, "footy". Light, drinkable. Actually quite okay, but nothing stellar.

0.33 l bottle brought by Ogi from 🇮🇹. Shared with Marko and him. Thanks. Hazy golden, large frothy white head. Yeasty, floral, citrusy. Nice hop and yeast balance. Malts underneath. Spicy flavours, light tartness. Watery. Soft to moderate carbonation, too low. Body is light, finish too. Lacks wild character.

Bottle. Pours a hazy golden color with a small white head. Has a fruity malty spicy yeasty weak sour aroma. Fruity malty spicy sour yeasty flavor. Has a fruity malty spicy yeasty finish with weak sour hints.
