Our recipe was inspired by the traditional refectory ales known as patersbier (“fathers’ beer” in Flemish) in Belgium. These sessionable beers are brewed by the monks for their dinner table and are typically only available at the monastery. Spencer is a full-bodied, golden-hued ale with fruity accents, a dry finish and light hop bitterness. The beer is unfiltered and unpasteurized, preserving live yeast that naturally carbonates the beer in the bottle and keg and contributes to the beer flavor and aroma.

Bottle from the Criterion, Leicester. Golden and clear with a filmy most of just off-white head. Nose has bags of ground coriander, honey, candy sugar and agave syrup in the aroma. Bittersweet herby taste with more coriander along with other bitter cooking herbs in the finish. Carbonation doesn't intrude but is just enough to lift the body. Masterful.

26/5/2018. Bottle from the Lincoln CAMRA Beer Festival 2018. Pours slightly hazy amber with an off-white head. Aroma of fruit, yeast, caramel, banana, malt and grass. Medium sweetness, light bitterness. Medium body, oily texture, average to soft carbonation. Easy drinking Ale.

Bottled. A hazy amber beer with a white head. The aroma has notes of fruits, yeast, caramel, and malt. The flavor is sweet with notes of malt, yeast, fruits, straw, and malt, leading to a bitter finish.

35cl Bottle from AH. Hazy golden amber colour, white head. Aroma of spicy Belgian yeast, fruity, red apples, apple sauce, hint of plastic. Flavour is medium sweet, light malty, spicy, sweet fruits, apples, bitter finish. Light bodied, mouthfeel is a bit thin. Decent Belgian Ale.

Deep orange, sediment-laden body, medium dissipating off-white head. Nose yeasty, with clove, pepper, and banana; also green apple and pear. Body doughy, peppery, dry, and phenolic (banana, clove). Sharply carbonated but the yeasty doughiness balance its prickliness. Tasty beer.

Pours a hazy golden-orange colour with a warm frothy cap, good stay and some thick foamy lace. Fruity malt aromas with orange notes and Belgian Ale yeast, on the mild side. The taste is quite cereal malt like with the oranges in the background. A nice light blend of hops and the yeast lingers. A pretty easy-drinking Belgian Ale.

Hazy copper with a white head. Zesty, citrus, spice, a bit of biscuit malt. Medium bodied. Finish has light spice. Saison like. Decent.
