This is part of Perry’s barrel-ageing programme. It ferments the cider to 5.5% using wild yeasts, before ageing for four months in oak barrels. Finally, the cider is sweetened with pear juice, giving a well-balanced hybrid cider which is refreshingly on the sweet side with notes of apple, pear and wood from the oak barrels.

Panda 🐼 at home thanks to Colin. A clear mid golden coloured pour with a thin white cap that fades. Aroma is dry woody apple fruit, bark, dry funk, oaky tannin. Flavour is composed of dry woody oak tannin, crisp semi sweet, apple, pear, light tang. Palate is semi sweet, to drying finish, oak tannin, mellow carbonation. Nice complexity.

Bottle at home, from Cider Incider, 18/06/22. Lighter shade of golden with a thin off white covering. Nose is bitter sweet apple, sugars, caramel, oak, tannins, light herb. Taste comprises sweet apple, sugars, light pear, oak, vinous, orchard wood, caramelised apples. Medium bodied, fine carbonation, light drying close. Not bad.

Bottle. Cloudy yellow colour. Light apple and pery aroma. moderate sweet and light acetic apple flavor. with week perry notes. Average finish. oily palate.

Bottle. Small head woth short duration. Color is hazy golden. Aroma and taste are apples, pears, fruits and has a nice sweet finish.

Box @ Cuthbert Brodrick, Leeds. Hazy dishwater-yellow coloured. Has a dominant watery sweetness over some of its drier characteristics. The oak barrel influence is there, but light, and the fusion of apple and perry pear works well here.

Box @ Shrewsbury Hotel. Pours misty yellow, aroma of musty pear, pulp, apple tart. Taste is a very moreish blend of apple with pear tartin and subtle glimpses of apple core. Complex but well integrated blend of flavours. This really is an excellent cider by an excellent producer.

Bag in a box at County Hotel Ashford JDW. Hazy yellow green colour lasting white head. notich oak. A little cold stewed apple. Some pear flesh. Good flavours and drunkable enough. A little tannin i suppose. Good.

Bag-in-a-box at the Monk’s Retreat (JDW), Reading. Pale greenish-gold with a faint haze. Very smooth. Lots of vanilla and some wood up front - the barrel-ageing is very obvious. Sharp, funky apple behind. Sweet ripe pears in the finish. Great balance, great depth of flavour, very drinkable and interesting to boot. An excellent cider, although if you don’t like barrel-ageing it may not be for you!
