This is part of Perry’s barrel-ageing programme. It ferments the cider to 5.5% using wild yeasts, before ageing for four months in oak barrels. Finally, the cider is sweetened with pear juice, giving a well-balanced hybrid cider which is refreshingly on the sweet side with notes of apple, pear and wood from the oak barrels.

Bag in Box at George Croydon. It pours cloudy greenish gold with limited head. The aroma is fresh, sweet, ripe apple, conference pear, damp leaves and fruit crumble. The taste is smooth, juicy, tart apple, juicy ripe pear, fruit pie, light acidity, tannins, touch of astringency and earth with a pretty dry finish. Medium bodied and still. Really nice balance and depth of flavour. Very nice.

BIAB at William Stead JDW Darlington. Hazy yellow amber colour, no head and aroma of apples & pears. Taste is fruity apple, apple pie, hints of pear, oak and vanilla, bittersweet with drying tannins. Oily mouthfeel, medium bodied, low carbonation, very dry tannic finish. Nicely drinkable.
