Imperial Milk Stout

8 Maids-a-Milking is the 8th beer in our "12 Days of Christmas" series, and we'd be udderly crazy to release anything but a milk stout. So we made an imperial milk stout to stand up to whatever Old Man Winter throws our way from now through 2019 with the final release of our series. 8 Maids-a-Milking is brewed with lactose, which is commonly referred to as milk sugar. It's the only type of sugar that is unfermentable by yeast, which adds more perceptible creaminess and sweetness to the finished beer. This mouthfeel and sweetness is complemented by robust layers of milk chocolate, subtle spice accents from our house Belgian yeast and roasty, cafe elements indicative of our take on the style. Celebrate the seasons with the best of both worlds: enjoy some now, and lay a few down for up to 4 years to be enjoyed upon the release of 12 Drummers Drumming.

Keg at CBC Islington - London. Pours clear ruby-brown with a creamy, off-white head. The nose holds light toast, dough, a little toffee, berries. Medium sweet flavour with more ripe berries, alcohol, toffee, prunes. Full bodied, chewy, with fine carbonation. Sweet and sticky in the finish, a bit warming, more tangy berries, toffee, raisins. Not bad.

On tap at Taphouse, Copenhagen. Dark brown with a small head. Aroma of roasted malt, coffee, biscuits, light lactose and some dark fruit. Similar taste. The body was full and the finish was long with warming alcohol.

Keg at Craft Beer Co, Covent Garden, London. A dark brown/black coloured pour with a decent tan head on top. Roasty, malty, chocolate, coffee, caramel aroma. Tastes roasty, malty, chocolate, coffee, caramel, smooth, sweet and milky. Very nice easy drinking milk stout despite the strength.

Keg at the CP&K, 18/07/16. Rich mahogany brown with a well appointed khaki cap. Nose is coffee grinds, roast malt, chocolate biscuit, earthy, dark fruit whisper. Taste comprises coffee cake, roast malt, charr, lactic tinge, chocolate, biscuit, dark fruit esters, light spice, black pepper. Medium + body, fine carbonation, semi drying close with a light boost. Decent enough impy, sweetness is balanced and restrained, a touch overly lactic perhaps for my liking.

750 ml bottle into snifter, bottled on 9/30/2015. Pours opaque dark brown/black color with a 1-2 finger dense and rocky khaki head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big milk chocolate, cocoa, caramel, brown sugar, toffee, toasted dark bread, vanilla, cream, light coffee, raisin, plum, fig, apple, cherry, date, pepper, clove, and yeast/roasted earthiness. Very nice aromas with good balance and complexity of dark/roast/bready malt, lactose, and moderate fruity/spicy yeast notes; with great strength. Taste of big milk chocolate, cocoa, caramel, brown sugar, toffee, toasted dark bread, vanilla, cream, light coffee, raisin, plum, fig, apple, cherry, date, pepper, clove, and yeast/roasted earthiness. Light roasted bitterness and yeast spiciness on the finish; with lingering notes of milk chocolate, cocoa, caramel, brown sugar, toffee, toasted dark bread, vanilla, cream, dark fruits, and yeast/roasted earthiness on the finish for a while. Damn nice complexity, robustness, and balance of dark/roast/bready malt, lactose, and moderate fruity/spicy yeast flavors; with a great roasted bitter/sweet and yeast spiciness balance and zero cloying sweetness after the finish. Light dryness from bitter/spiciness as well. Light-medium carbonation and medium-full body; with a very smooth, creamy, and lightly silky/sticky/chalky balanced mouthfeel that is great. Alcohol is well hidden with only a small warmth lingering after the finish. Overall this is a great Belgian imperial milk stout. All around great complexity, robustness, and balance of dark/roast/bready malt, lactose, and moderate fruity/spicy yeast flavors; very smooth and easy to sip on for the big ABV. Not overly roasty, but well rounded on stout complexity; without too much yeast influence. A very enjoyable offering.

750 ml bottle from Bottle King. Pours dark brown with a small froth of brown head. Aroma of chocolate milk, green coffee, yeast, spice, and booze. Flavor starts sweet, spice and some bitterness. Finishes of that green coffee bitterness. The mouthfeel is smooth and creamy, fairly full bodied. Finishes on the boozy, hot side. Big milk stout, not sure I've ever had one quite like this.

Draft @ Mikkeller & Friends, Copenhagen. Pours a black color with a small tan head. Has a roasted malty sweetish spicy chocolate aroma. Roasted malty sweetish spicy chocolate flavor. Has a roasted malty sweetish chocolate spicy finish.

This beer pours a dark brown color with some ruby around the edges, and a medium thin foamy tan head that recedes steadily to an outer ring. Stringy lacing on the glass. The aroma consists of chocolate malt, spice and fruit. Full-bodied with flavors of chocolate, caramel malt, spice and fruity yeast. The finish is cocoa and Belgian yeast. Above average overall.

Draft. A black beer with a dark brown head. The aroma has notes of roasted malt, ash, fruits, and chocolate. The flavor is sweet with notes of alcohol, over ripe fruits, chocolate, and roasted malt, leading to a dry roasted finish.
