Elle is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful beer that celebrates the evolution and successes of following a passionate vision.

Bottled. Pours a moderate yellow. Lots of cab. Yeasty funky, hitting all of the notes. A good saison.

Bottle from Hopt. Aroma is a bit funky with citrus, lemon, wheat, straw, oak, notes of white grape and apple. Flavour is tart and sour with a fairly dry finish. Body is medium. Lemon, tart, good sour and funky Saison.

Bottled. Yellow colour with a small white foamy head, which leaves some lace. Aroma is mild funk, some tart wood and mild grass and citrus to it. Flavour is pretty much the same elements. Quite straight forward, yet very pleasantly tasty and drinkable. Sometimes simplistic is winning.

Greatness, has that soft oak foudre delectable-ness. I think the age (2018) might have made it more mild...kinda reminds me of a really good, traditional, only slightly tart Berliner Weisse. So enjoyable. Pic: my student Elli playing guitar.

Pint bottle. Poured a hazy yellow golden colour with a short-lived fizzy white head. The aroma is dry yeasty, light citrus fruits. The flavour is moderate to light sour, with a fresh, crisp, woody, herbal, light lemon citrus, herbal, mineral palate. Medium to light bodied with lively carbonation.
