Elle is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful beer that celebrates the evolution and successes of following a passionate vision.

50cl bottle pours a murky gold with some white head. Nose has honey and grass and herbs, apricot, yeast, some grist. Flavor is clear lemon and peach, some honey and candy, a lick of pineapple. Finishes off dry. Some tartness.

Region tick. Gold with a cm of white head that fades to nothing. Aroma is funky with lime, old lemons, crackers, pears. Light bodied, a little slippery. A balance of tart, sweet and bitter with some floral and bracken notes as well as mellow lemon and brusquer lime. A little drier at the end might have lifted it further (and made it more convincingly a saison too). But I like the autumnal orchard fruit and the way it goes with citrus and Brett.

Florals and light citrus. Super easy drinking and well balanced. Tangerine. Nice citrus. Hazy yellow pour with pretty good head. Light tangy end. Great balance. Bottle.

Bottle at home. Vintage 2018. Pours a hazy straw colour with a small off-white head that fades fast. Aroma of hay, pepper, flowers, grass, oak, cilantro, apple cider vinegar and lemon. Flavour of lemon, apple cider vinegar and hay and grass in the end. Has a slick and crisp mouth feel, light to medium body and a light bitterness. Fresh and well balanced. Complex aroma but a surprisingly light flavour.

Sample thanks to Grumbo: Poured a golden with a white bubble head. Aroma is pungent, oaky, vinous, fruit. Taste is light cereal grain, fruit, woodsy.

4/4/2021. Bottle shared at the first post-lockdown Ipswich beer share. From LowCostBeer.com. Poured clear pale gold with a small frothy white head. Aroma of wood, citrus, yeast, herb, pear, white grape and green apple. Moderate sweetness, bitterness and body. Carbonation has a gentle fizz. Lovely woody, tart and dry finish. Very nice.

Bottle thanks to Rainer. Pours a hazy gold with medium white head. The aroma is oak, lemon zest, floral. Thin body, mineral, lemon, nice tartness, easy drinking, enjoyed this.
