Elle is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful beer that celebrates the evolution and successes of following a passionate vision.

Bottle that sat in the fridge for a couple of years. Says 2017 on it. Pours a slightly hazy straw color with a thin look and lots of streams of carbonation. Aromas are lemony with a little horse blanket. Flavor is nice and light and sour. Yum!

Bottle @ Mikkeller. Pours clear pale yellow with a fizzy head. Tart and dry flavor with notes of barnyard, wood and grass. Super dry and refreshing. Incomplex but tasty.

Pours clear bright gold into a tulip. Bright white micro head with excellent retention recedes leaving no lacing. Funky lemon aromas. Crisp with sweet lemon upfront turning quickly to sour pulp and peel before the lasting pith finish. A bit one-dimensional on the lemon, but enjoyable.

375 mL bottle from Beer Run, 2017 vintage. Hazy pale yellow, thin fizzy white head, decent retention. Aroma of stone fruit, apples, pepper, pale malt, lemon, funk. Taste is lemon, funk, oak, a musty note. Medium bodied, low carbonation, strong lingering tartness. Solid.

Bottle @ Mig & Ølsnedkerenm 5.1%. Clear yellow with tiny head. Aroma is malt, yeast, lemon, citric, grapes and lemon. Flavour is malt, lemon, citric, little sweet, brett, oak, wood, medium dry, tart and a little bitter.

Bottle at home, split with James, 10/11/18. Lightly hazed pale golden blonde with a well presented off white covering. Nose is citric tinged straw, lemon rind, light herb, wide must. Taste comprises lemon sherbets, damp straw, wooded notes, light yeast esters, white peppery spice, apple core, vinous twang. Medium bodied, fine carbonation, semi drying close. Decent saison.
