Elle is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful beer that celebrates the evolution and successes of following a passionate vision.

16.9 oz bottle. Aroma is lemon, floral, funky. Pours clear golden with flecks of sediment underneath a one finger white head with decent retention. Taste is moderately sour (7/10), barnyardy, lightly dry. Good.

Bottle, 0.50l. Aroma of white wine, must, grape skin and funky barnyard. Pours clear pale golden color with thin quickly diminishing white head and sparkling appearance. Taste starts light sweet and sour grainy and citrusy, following is vinous and yeasty, mouthfeel is rather dry with smooth finish. Light body, thin creamy texture and average carbonation in palate. Seems more metallic than woody to me...

500ml bottle. Clear, yellow-ish, pale golden colour with average, firm, foamy, half-way lasting, non-lacing, white head. Very homogeneous, integrated, fruity, funky, floral, minimally woody aroma, hints of dried orchard fruit, chamomile, brine, dill, quince. Taste is dry, tart-ish, fruity, minimally floral and herbal, homogeneous and integrated, hints of apple, quince, gooseberry, brine, dill and other less explicit flavours, cautious oaky overtones become more discernible in the finish. Oily texture, super soft and smooth palate, prickling carbonation.

Fra flaske på RBHD-samling på Bjørnøy, juni-18: uklar lys korngul med ok skum. Sursyrlig aroma og smak med frisk munnfølelse og tørr avslutning. Citroner dominerer smaksbildet. Fatlagret saison, men den minner også om en surøl. God og meget forfriskende, deilig drikke på denne varme sommerdagen. Definitiv mersmak her!

From a bottle. Pours a clear gold with a white head. Aroma of oak and sour grapes. Flavor is acetic sour buffered a bit by oak. Tart finish.

At a tasting, thanks, no head, hazy palish yellow color, aroma of white wine, grapefruit, lemon and white wine vinegar, flavor white wine, apple, spice and brett all around, mellow sourness, touch of sweetness, light to medium bodied. Very nice and enjoyable.

Bottle shared at a tasting at Tom L's place. Cloudy pale yellow. Great funk, citrus, a bit of vinegar, flowers, sweat, oak, fruity, dry, tart, acidic, juicy, medium-bodied. Great and refreshing.

Total Wine, I think: pours mostly clear gold with a white head. Aroma is some light basement, nice funk... the funk I like. Hops ring through in the nose as well. Flavor is lightly tart. Not sour. Just funky. Super smooth mouthfeel. Very drinkable. Excellent example of the style.
