Elle is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful beer that celebrates the evolution and successes of following a passionate vision.

Bottle. Brewdog, Sheffield. Colour of hay. Soft haze. Barely a head. Nose has cereal grain. Sliced lemon. Fresh cut wood. Taste is mostly dry, with a little tartness. Clean and light on the palate. Foamy carbonation. Dry and light tart finish. Decent enough, but thereβs not too much going on, really.

Bodney Towers bottle share. Thanks to Dan. Hazy pale gold beer, small pale cream colour head. Airy palate, semi dry, decent fine carbonation. Dry thin malts. Mildly tart lemon and orange. Light floralness. Dry and slightly bitter finish. Thin, dry and tangy. Ho hum.

500 ml bottle into tulip glass, 2017 vintage bottling. Pours slightly hazy pale straw yellow color with a 2 finger fairly dense and rocky white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming retaining the cap. Aromas of big tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, berries, hay, straw, grass, pepper, oak, wheat, and cracker; with lighter notes of leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, oak, and moderate pale malt notes; with great strength. Taste of big tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, berries, hay, straw, grass, pepper, oak, wheat, and cracker; with lighter notes of leathery/musty funk, white wine vinegar, and yeast/oak earthiness. Light-moderate lactic tart/sourness, yeast/oak tannin spiciness; and light wine tang on the finish. Lingering notes of tart lemon, lime, peach, pear, pineapple, melon, red/green apple, white grape, white wine, berries, hay, straw, grass, pepper, oak, wheat, cracker, light funk/vinegar, and yeast/oak earthiness on the finish for a while. Incredible complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak, and moderate pale malt flavors; with and awesome malt/tart/sour/spiciness balance; and zero puckering/astringent flavors after the finish. Moderately crisp finishing. Moderate increasing dryness from tart/sourness, yeast/oak spiciness, and carbonation. Medium-high carbonation and light-medium body; with a very smooth and moderately grainy/acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol as expected of 5.1%. Overall this is a fantastic wild saison! All around outstanding complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak, and moderate pale malt flavors; very smooth, crisp, and refreshing to drink; with the modestly lactic/spicy/tangy/tannic/drying finish. Perfectly balanced Brett/Lacto/Saison yeast complexity, nice oak presence, and a solid wheat/pale malt backbone to balance acidity. They definitely have a distinct house profile across all of their wild ales that I have had so far. A highly enjoyable offering, and amazing style example.

Bottle at LKS thanks to Dan. It pours clear yellow - gold with a small white head. The aroma is soft, sweet, oily, candied lemon, tangy, musty, funk, gooseberry and Granny Smith apple. The taste is crisp, dry, bitter, oily, oak, Granny Smith apple, lemon rind, pithy, zesty, some sherbet and a touch of acidity. Medium body and fine carbonation. Fresh and bright. Well - rounded and quaffable.

Refrigerated 0.5 L brown bottle poured into a cup. Clear golden with small white head. Aroma is nice tart, medium body, low carbonation, and little lacing. Taste is light tart.

Bottle shared at Leighton's place at the Ktwse tasting, 12/12/2017. A translucent pale yellow straw coloured our with a fine white head. Aroma is light funk, grape, wheat, straw, grains, white grape, tart, faint brett. Flavour is composed of tart light wheat, grain, white grape, melon, saison. Palate is tart, crisp, frothy carboantion, , super dry finish.

Bottle shared in Hackney - many thanks to Danny. Pours lightl hazy gold with a foamy, white head. Nice aroma, some tangy lemon, hay, soft funk, wheat flakes. Light sweet flavour with mellow acidity, lemon candies, low bitterness. Medium bodied with spritzy carbonation. Nicely balanced finish, with further tangy lemon, a little minerality. Good stuff. Very drinkable.

Bottle shared by Marcus. Pours light gold with a transient white head. Aroma is acidic/woody/earthy. Med body. Flavor is mildly acidic, somewhat tannic and suggests bacterial presence. Quite dry, even astringent. None of the usual suspect flavors (fruit/hop) are discernible, but itβs very pleasing.

$10.99 bottle, Wine Warehouse. OK Ohio beer, bring the Tribe luck tonight. Pours hazy pale gold with a soft white head. Aroma of tart lemon, funk, straw. Flavor is crisp lemon, grass, yeast, a little funk. Tingly in the mouth. Slight acidic yeatsy back end.
