Elle is fermented in stainless with a mixed culture of classic saison strains, wild yeast, and bacteria. The beer then rests in a foudre for 6 months gaining oak notes and a rounded acidic profile. A beautiful beer that celebrates the evolution and successes of following a passionate vision.

16.9 FL oz bottle purchased at Cappy’s Wine and Spirits in Loveland, Ohio. The pour is a hazed yellow with a noisy white head that falls quick with big bubbles. The aroma is tart lemon citrus, with straw notes. The taste is lactic citrus sour up front, though that clears quick, with grass, straw and a soft wheat grain Saison under that. The palate is medium to light bodied with soft natural carbonation and a citrus finish. Nice one.

On draught at Bob’s Bar during the "DJ Night With Jackie O’s!!!" event on 07/06/2017. Clear golden color with a thin white head that dissipates steadily to a wispy film. Short strings of lacing. Aroma of tart citrus, yeast, spice and malt. Light to medium body with flavors of tart lemon, funky yeast, oak and bready malt. The finish is oaky and fruity with an herbal yeast aftertaste. Good beer overall.
