Confidence is our hoppy red ale. It was brewed as a tribute to Kung Fu San Soo Grand Master Jimmy H. Woo whose motto was “You can take my life but not my confidence.” I was very fortunate to be trained by first generation Master Chuck Cory who instilled that confidence in me. I designed this red ale in respect of his red master characters. Without his influence and the positive encouragement of my family I would not have had the confidence (or insanity?!) to chase my dreams around the world. The beer has a bold ruby colour. The malt character is quite strong, with generous helpings of toffee, which is overlayed with a bitter and citric hop hit. This beer slides effortlessly past your defenses and assaults your mouth with flavour, leaving you overwhelmed. The red colour and warming character make it perfect for autumn drinking, we've therefore used to try to release it around that time annually but adapting to it's demand it has now become one of our primary cores.

330ml can. Pours clear amber, obviously, with a small beige head, good retention. Aroma: hoppy, pine, spices, malts. Taste: spicy piney hoppy flavours with a nice malt base, fruity, citrus, nice bitterness. Well balanced, medium body and carbonation. Great beer.

Can. Appearance - deep amber with a nice fluffy head. Nose - red fruits, earthiness, resin. Taste - more red fruits, a hint of toffee, rye bread. Palate - close to medium bodied with a creamy yet crunchy texture and a long dry crunchy finish. Overall - good beer.

Canned. Amber colour with a mediumsized off-white head. Aroma is floral, wooden, mildly fruity along with some wheat and toffee. Flavour is quite similar in most ways, but also has a rather crisp malty edge to it.

330ml can. Murky, brown-ish dark amber colour with average, frothy, half-way lasting, moderately lacing, off-white head. Caramel malty aroma with a nuttily touch, floral hoppy overtones, some grassy hoppy spiciness. Taste is slightly bitter, floral and grassy-spicy hoppy, slightly nuttily, caramel and crystal malty basis; minimally water yinterludes.
