(Previously labeled Persimmon Lambic). Persimmon was the first sour beer we brewed to use a fruit from a native North American species of flora, the persimmon, which is also a popular Midwestern delicacy. Persimmon is a fruited sour ale where the distinct characteristics of American persimmons are melded with a mildly tart base of sour ale. Fresh aromas of persimmon, pear and peaches accompany the light straw color. Lactic tanginess, field flavors, and dry fruits create a refreshing and experiential taste. The finish is very dry, with lingering persimmon flavor.
(Old description) The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Refrigerated 75 cl brown bottle from queenholly, bottled on Febuary 26, 2014, corked and capped poured into a glass. Aroma is acidic, medium body, medium carbonation, and little lacing. Taste is rich tart persimmon, sourness, lemon, and some oak. Lots of flavor, quite intense sour, fantastic, thanks queenholly.

750mL bottle, pours a cloudy blonde with no head. Aroma is hugely fruity, with loads of bright persimmon - wow, this is hugely fruity. Flavour is hugely fruity as well, with loads of persimmon, a touch of funk, and more fruit. Others in this tasting are getting acidity on this, but I'm not really getting it. I love persimmon and I love the way it's used in this lambic. Not a lambic, but this is very nice.

Bottle @ Avery Sour Fest 2014. Pours a milky yellow appearance with little head. Heavy passion fruit, guava, lemon, and other tropical fruits in the nose. The flavor was heavily acetic, extremely puckering and sour. Some funk but the beer so damn sour that it was hard to get other notes. The first beer I grabbed at the festival and possibly the first beer to run out, but it was a significant disappointment to me.

Sample during the Secret Barrel Society tour on 05/24/2014: Hazy bright peach color with a medium white head that dissipates steadily. Short strings of lacing on the glass. Fruity and floral aroma. Light to medium body with flavors of citrus, yeast and oak. The finish is mildly funky with a fruity yeast aftertaste. Pretty good all around.

Bottle @ Indy Sour Fest. Tart lactic and funky musty lemony aroma. Cloudy yellow with a small white head. Sour lactic lemon and funky musty basement flavor, with just a touch of balancing sweetness. Light body, lively carbonation.

750 split 2-ways with the GF in some stemware at 45F - 2011 bottle
A - Poured a big head that faded like seltzer. Very fizzy. Appearance very persimmon like with a clear golden orange.
S - Smells like a tart acidic grape juice with notes of honey and caramel.
T - Very grapey. Tannic, grape skins with this interesting sweet acidity that reminds me of sparkling grape juice. Very sweet
M - sweet up front and dry through out.
O - I liked this a lot. I found the tartness to me tongue numbing and the sweetness to be too close to grape juice.
