(Previously labeled Persimmon Lambic). Persimmon was the first sour beer we brewed to use a fruit from a native North American species of flora, the persimmon, which is also a popular Midwestern delicacy. Persimmon is a fruited sour ale where the distinct characteristics of American persimmons are melded with a mildly tart base of sour ale. Fresh aromas of persimmon, pear and peaches accompany the light straw color. Lactic tanginess, field flavors, and dry fruits create a refreshing and experiential taste. The finish is very dry, with lingering persimmon flavor.
(Old description) The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

Bottle courtesy of GT2, thanks! Clear pale yellow color, fluffy white head, solid lacing. Aroma of medicinal lemon. Taste is summer fruit, sour pomegranate. Hi carbonation. One of the best persimmon lambics I’ve had.

750ml bottle. Pale yellow body, looks filtered. Mega sour aroma, funky urinal barnyard. Bready fruit flavor, with some massive tart sourness. Island funked out fruit, but steady lime-lemon flavor the whole way. Big sour tones, huge lactic action.

Where the Wild Beers Are, 2011.Opaque orange. It is a very good looking beer, with a light cream color. Aroma has citrus and yeast. Light cinnamon in the flavor, as well as lightly sweet citrus. Moderately sour. One of the better lambics I have had from Upland.

Bottle @ Too many Geuze’s - only one toilet , Ulfborg 2012 - Day 1. Very pale hazy yellow with a quickly dissolving tiny white head. Tart aroma then followed by a strong sweet and not so easy to identify citric, beery like fruit aroma. Taste is sour and sweet, dominated be the fruitiness of the persimmon. Very unique and interesting.
