仲間シリーズ第22弾(305バッチ目):とても喜ばしいことに以前一緒にコラボレーションビールを造ったカリフォルニア・FairfieldにあるHeretic Brewing のJamil Zainasheff(以下、ジャミル)と再びビールを造りました。

前回のジャミルとの共作、梅ジュースと赤しそを使ったサワービール「紫の人喰い」を憶えている方も多いと思います。ジャミルの豊富な知識と経験に支えられながら、京都醸造初のサワービールに取り組めただけでなく果汁や他の原料を使うという大きな挑戦ができた回でした。しかし、今思えばひとつ心残りもありました。それはジャミルが終始私たちの希望を採用してくれたこともあり、自分たち本意に醸造を進めてしまったこと。それを除いてはジャミルのサポートのおかげで、仕上がりも他にないような素晴らしいものが出来たし、彼とともに醸造したという達成感も深く刻まれた印象でした。そして、そんな彼から再び、次回来日時の次のコラボの話が舞い込んだのです。

第二弾の仕込みは昨年2018年の11月中旬のジャミル来日時に行いました。前回の「紫の人喰い」の時の心残りを晴らすつもりで、今回は最初のレシピ作成から彼に大きく委ね、リベンジを受けて立つような思いで臨みました。が、しかし驚いたことに、私たちがいくらそのようにしたいと彼に伝えても、ジャミルは今回のコラボも京都醸造の飛躍の機会になればいいと考え、蓋を開けてみれば私たちが再び今回のプロジェクトでも主要な部分を受け持つことになったのです。それだけでなく、今回の醸造に合わせてPoly-gyleという少量の水で高濃度の麦汁を作り出す新技術を惜しみなく私たちに伝授までしてくれました。”ここまでやられちゃリベンジにならないんじゃないか!?”そんな風に思っていました。

醸造当日は、ジャミルに教えてもらった新技術もうまくいき、幸先良いスタートをきりました。しかし、全工程の3/4まで来た時にジャミルの意図せぬリベンジが始まったのです!それは、私たちの醸造タンクの数を実際より多く見積もっていたため、急遽約1500リットルにも及ぶ量の麦汁が行き場のない状況になることが発覚しました。皆大慌てで何とか麦汁を入れるスペースを確保し、事なきを得ましたが、少しでも気づくのが遅かったら、、、と考えると本当に危機一髪でした。リベンジは続きます。これをきっかけに半日分程のやるべき仕事が増え、結果としてこの日の醸造は長丁場になったのですが、日が暮れ始めた時にジャミルはどうしても逃せない夕食の予約時間が迫っていることを明かし、作業半ばで離脱!その後、残されたチームでなんとか醸造作業終え、街でジャミルと合流し、一緒にグラスを傾けている時の彼の顔にはリベンジを成功したという本当に嬉しそうな表情を浮かべていたのは今でも忘れられません。

共に仕込んだビールはその後、順調に発酵が進み、11%というド級のインペリアルベルジャンレッドエールに仕上がりました。アメリカとベルギーの酵母の掛け合いが生む、リッチでモルティ―なこのビールはタンクの中で3か月の熟成を経て、ようやく皆さんにお披露目できるところまで来ました。そしてまごうことなく長期熟成に向くこのビールを私たちの初めての木樽熟成ビールとして一部を別に保管することにしました。これについてはまたいづれ。まずはこの京都醸造始まって以来の最も大きなインパクトを残すジャミルとの共作「異端者の逆襲」をぜひ体験してください!

名前の由来:ジャミルの醸造所、Heretic Brewingはその名の通り、母国アメリカで流行やビールの型にはまらない”異端者”的なポジションを確立している。また、彼のウェブサイトではこう言う。

「90%のビール愛好家が大量生産されたライトラガーを好むこの世界では、間違いなくクラフトビールをこよなく愛する人はみな”異端者”さ」

この異端者のリーダーがこのビールでもしっかり仕組んだ美味しい仕返し。それこそが正に異端者の逆襲である!

スタイル: インペリアル・ベルジャン・レッド

The 22nd beer release in our "Nakama Edition" series (also our 305th batch): We recently had the pleasure of brewing another collaboration with Jamil Zainasheff from Heretic Brewing in Fairfield, California. As you may recall, our first collaboration resulted in 'Purple People Eater', a uniquely Japanese take on sour beer using plum juice and red shiso leaves. If we are being honest, we were pretty selfish with the recipe and utilized Jamil’s vast brewing knowledge and experience to not only brew our first sour beer but also refine our technique of using fruit and other additives in our beers. The beer turned out great and we had a blast working together, and being the nice guy that he is, Jamil even offered to collaborate with us again on his next trip to Japan.

That visit came together in mid-November 2018, and feeling bad that we had taken the brew hostage for 'Purple People Eater', we wanted to turn control of the recipe over to Jamil so that he could exact his revenge on us. Surprisingly though, no matter how much we pushed him, he still wanted to use the opportunity to help us grow as brewers, and in the end it seemed like we were the ones who were once again in control of what was being brewed. He was even going to teach us a new technique to brew strong beers called “poly-gyle” (in short, using twice as much grain with half as much water to create super strength wort). So much for his revenge!

Or so we thought. Brew day started without a hitch and Jamil’s new technique was working brilliantly. We got to what we thought was the last 1/4 of the brew day, at which point Jamil realised that he had made a bit of an oversight. He thought our brew system had more tanks than it did, meaning we had to scramble to find space to put nearly 1500 liters of wort! While this realisation came just in the nick of time, it did mean that the brew day now had another 1/2 day of work left, and by the way did he mention that dinner reservations meant that he wouldn’t be hanging around to slog through the next few hours!? When the brew day finally finished and we joined him for a few beers, he was looking quite pleased with himself for the revenge he had exacted!

The beer turned out great though and wound up being a whopping 11% ABV Imperial Belgian Red Ale. We used a blend of American and Belgian yeast to ferment this rich, malty brew, and after nearly three months in the tank it is finally ready to release. This is certainly a beer that will age well, and we are using a portion of it to make our first steps into the realm of barrel ageing beer. More details to follow, but for now enjoy this first release of one of our most impactful beers yet!

Naming: Jamil’s brewery is all about being heretical when it comes to commonly held opinions about beer and what it can and should be. As he notes on his website, “on a world where over 90% of beer drinkers believe mass market light lagers constitute the universe of beer, craft beer lovers are all heretics.” The Chief Heretic certainly exacted his revenge during this brew, hence 'Heretic’s Revenge'!

Dark ruby red pour with only a small head. Aromas of toffee/caramel, wiskey, red fruit/berries, taste adds some apple, raisins/red wine, oak. Really, really nice and dangerously sessionable for 11,0% ABV

Belgian doughy yeastiness. Bit of booze. Nice if not mindblowing.

Tap @ Ant n bee, Roppongi. Pours darker red, dark amber somewhat. Some foam on the top. Some caramel, light hops and dried dark fruits in the nose, herbal feel there also. Taste has low or medium bitterness,quite malty, bitter and a bit rough perhaps. Belgian in character, rowan berries, light tannin filled bitterness. Feels quite fresh though, could be interesting to age this a bit, maybe try sone barrels. Also not bad as it is. Alcohol well hidden, drinks as 7-8% beer.

Ruby red color. Apple crumble, and apricot and cherries with brandy notes. A bit rough and young but I like it. Will be great in 2 years

Tap at KBC. Kyoto Brewing x Heretic Heretic’s Revenge 11% An Imperial Red that is a plum red with a big bready stone fruit aroma reminiscent of a Belgian Dubbel to me. Quite dry and no evidence of that huge abv. I don’t get much malt character other than the sweetness. Nice smooth stuff.

Tap at Kbc. Deep, pretty hazy red. Lace. Nose is caramel, spicy yeast, raisin, plum, cherry. Sweet, slightly hot, spicy. Rich dried fruits and spices. Hints of curacao, raisin, apple, caramel. Rich and soft, silky body. Still young but nice stuff and dangerously drinkable.
