限定醸造シリーズ第27弾 (191バッチ目:KBCがベルジャンスタイルのビールを作ることに重きを置いたブリュワリーだというイメージをお持ちの方も多いと思います。
確かに私たちはベルギー酵母をハウス酵母として使用していますが、ベルギースタイルのビールを伝統的な方法に沿ってつくることが私たちの基本スタイルだとは考えておらず、
この点についてベルギーにあるブリュワリーの方々は強く同意されるのではないかと思います!
そうではなく、私たちのつくるビールの多くはこうしたベルギーの伝統的なスタイルが持つ素晴らしい面と、他の国々のビール作りの伝統の中から生み出された考え方や味わい、
原材料といった要素の組み合わせから作られています。
伝統的に用いられてきた品種とは違うホップを使用したり(「一期一会」にはニュージーランド産のPacific Jadeとアメリカ産のCascadeを使用しています)、
ハウス酵母を本来使用されるスタイルとは違う基本レシピにおいて使ったり(「欧州の風」はアメリカンブロンドエールのレシピが元になっています)、
または伝統的なスタイルの基本レシピをアレンジしたり(「深雪」は小麦麦芽を多く使用したTripelにチャレンジしたいという思いから生まれたものです)、といったように組み合わせの形は様々です。

ですが、時々襲ってくるベルギービールの典型的なスタイルを再現してみたいという強い誘惑が、伝統的スタイルのビールの仕込みへと突き動かしました。
その誘惑は私たちの親友ブラッセルズビアプロジェクトとのコラボビールである”洋魂和才”において始まりました。このビールのレシピはベルジャン・デュベルをベースとしており、そこに京味噌とベルギー産蜂蜜を加えました。
こうした特別な原料を使うことはビールに独特な特徴をもたらしますが、今まで作ってきたものよりも濃い色合いのベルギービールにおいてハウス酵母がどういったパフォーマンスを発揮するのかという洞察をこの時の経験から得ることができました。冬が間近に迫った頃、2017年に別れを告げるこの時期にぴったりのベルジャン・ダーク・ストロング・エールを仕込むことにしました。

2ヵ月近くにわたるタンク内での熟成期間を経て、ついにこのビールがリリースの時を迎えました。このスタイルの典型的なビールには及ばないかもしれませんが、濃厚なモルト感と酵母の特徴が絶妙な奥深い味わいを生み出しました。
濃厚な味わいを持つ一方で、9%というKBC史上最も高いアルコール度数を感じさせないほどキレのよいすっきりとした後味が楽しめます。リリースまで長く待った甲斐が十分にあったと思える仕上がりとなっており、
まさに一年を締めくくる乾杯にふさわしい相方となることでしょう、乾杯!

名前の由来:私たちがビールにつける名前は様々なところから着想を得ており、今回のビールの名はまさに日々の醸造エリア内における必要性から出てきたものです。醸造エリアの各タンク内のビールの状態や作業内容を確認するためにホワイトボードを使用しています。しかし、”Belgian Dark Strong Ale"という長い名前が収まるほどこのボードは大きくないため、仕込みの日にブリュワーの1人が”Be Strong"と省略して限られたスペースになんとか書き込みました。日々このボードを見ながら作業をしていくなかで、ふと目に入るこのわすかワンフレーズの略称はすぐに私たちにとってインスピレーションやモチベーションを与えてくれる大きな存在となりました。特に疲労感を覚える長い作業の日、この言葉が諦めない気持ちや前に進む勇気、そして”強くあれ”という力強い励ましのメッセージをくれたのです!

Name: Be Strong

The 27th beer release in our "Limited Edition" series (our 191st batch): Many people seem to think we are a brewery that focuses on producing Belgian beer. While our house yeast is a Belgian strain, we don't consider ourselves to be brewing Belgian-style beer in a traditional manner, and we are fairly certain that breweries in Belgium would strongly agree! Instead, the majority of our beers combine the best aspects of these traditional styles with ideas, flavours, and ingredients that emerged from the brewing traditions of other countries. This can take many forms, whether it is incorporating non-traditional hops ('Ichigo Ichie' uses Pacific Jade from New Zealand and Cascade from the United States), utilise our house yeast in a base recipe for a different style ('Oshu no Kaze' is essentially an American Blonde Ale recipe), or modify the base recipe of a traditional style (the inspiration for Miyuki came from wanting to try a Tripel made with a large percentage of wheat malt).

Sometimes, though, the temptation to try to replicate the classic styles of Belgium is strong enough to lure us to the traditional side of these brews. With this beer, the temptation actually began with 'Yokon Wasai', a collaboration brewed with our friends at Brussels Beer Project. The base recipe for this beer was a Belgian Dubbel to which Kyoto Miso and Belgian honey were added. While these special ingredients added a unique character to the beer, the brew also gave us insight into how our yeast would perform in darker Belgian beers. With Winter around the corner, we decided to brew a Belgian Dark Strong Ale as a perfect accompaniment to sending off 2017.

After nearly two months in the tank, the beer is finally ready to be released. While it may not trump the classic versions of the style, a rich malt and yeast character create a wonderfully complex flavour experience. Behind these rich flavours is a nice crisp and clean finish that hides the highest ABV of any KBC beer to date (9.0% to be exact!). While it was a long wait, we think you will agree that it was worth it and hope that it is a perfect companion to toasting the year end...kanpai!

Naming: Inspiration for the names we give our products comes in many forms, and for this beer it actually came from necessity in the brewhouse. The white board we use to monitor the condition and status of the beer in each tank is only so big, and on brew day one of our brewers only managed to fit "Be. Strong" as an abbreviation for "Belgian Dark Strong Ale" in the limited space available. As we used the board each day, the abbreviation quickly became a source of inspiration and motivation, especially on those really long, hard days, reminding us to never give up, keep moving forward, and to Be Strong!

Kyoto Brewing 9% Be Strong Belgian Strong Dark Ale Plum brown with a wisp of a beige head. Big fruity plum and figs with some nutty aromas. Full bodied and smooth. The taste starts off sweet then gets chocolatey and sharply fruity. I heard it was a bit sharp when young buts its melding together well three months later. A bit of boozy heat in the finish tells me it could age further. ---Rated via Beer Buddy for iPhone

Got this from a friend. I thought it was a mediocre Japanese brewery experimenting with a strong ale, but clear don’t know what They are doing. Most surprising thing I’ve ever had from Kyoto. Strong, simplistic and uneventful. Gave this 3.1 Toffee, plum, cherries and caramel sweet malty nose. Sweet malty mouth. Full body. Much better than before

Tap at Bungalow Teramachi. Deep reddish brown color, hazy, with a low head. Nose is molasses and brown sugar, caramel, honey, some dried fruits, and something vaguely smoky. Flavor is very sugary, lightly smoky, with an astringent, almost husky malt finish. Belgian yeast spiciness is there but not clean. Seems almost like the yeast quit half way through. Very sweet and sugary and also heavy. Maybe time will sort that out. Hope to try it again in 6 months.
