330ml bottle. Brown, off-white head, good retention. Aroma of caramel malts, sweetness, stone fruits, raisins. Taste of sweet malts, caramel, raisins, some chocolate, moderate to full bodied and that harsh carbonation. Good beer but not great.

Bottle at home, dark brown beer, small head. Aroma is malt, caramel, sweet fruit, raisins, hint of chocolate, always a good choice

Bottle (stamped with many numbers on the bottle but L19-160) from Total Wine & More, Burlington. Appearance is cloudy dark brown (like dark iced tea or root beer) with fine mist of dark particulates, fair sparkle, 1/2-finger width fizzy off-white head with poor retention and no lacing. Aroma is rich brown bread along with plum/dark fruit, crackers/earthy malts. Taste is caramel, fruit. Mouthfeel is medium side of light-to-medium bodied with smooth, fairly thick texture that turns frothy along with fizzy-stinging carbonation, nice mild alcohol warmth and crisp finis as taste. Overall, aroma is great and taste is pretty good but the taste-mouthfeel experience is dominated by carbonation that's too fizzy. Better after letting it rest/calm down.

Klare, dunkelrote Farbe mit weißer Schaumkrone. Malziger, fruchtiger Geruch, schwach hopfiger Geruch. Geschmacklich malzig, fruchtig, leicht hopfig. Mittlere Süße mit leichter Bitterkeit, mittlerer bis voller Körper mit spürbarer Kohlensäure.

Cette Chimay rouge a réussi à me surprendre avec une véritable marque personnelle, ce qui n'est pas donné à tout le monde. Elle présente en effet deux temps. La première, tout en fraîcheur, sur l'amertume laissant ensuite la place à une base de base torréfiée, avec une présence notable de la levure, où l'on retrouve toute la tradition et le caractère des bières d'abbaye belges. L'ensemble est plutôt raffiné même si une petite astringence est présence comme si cette Chimay brune voulait bien nous faire comprendre qu'elle était ancrée dans la tradition belge. L'équilibre est, mais faut-il le préciser, excellent. On ne s'appelle pas Chimay pour rien. Le visuel se porte sur un brun limpide surmonté d'une mousse beige de 3 mm. Le nez sur une amertume relativement prononcée et doublée d'une très légère acidité présente une bonne complexité sur la prune, la noisette, l'orange et le chocolat. A la dégustation, dans un premier temps, c'est donc la fraîche amertume qui arrive en bouche à l'attaque et avec une très légère acidité en seconde bouche. Et ce n'est que dans un second temps que les arômes de malts torréfiés et de levure accrochent le palais. Nous sommes bien sur une trappiste belge, et ce pour notre grand bonheur. De légères épices viennent enrichir le cocktail présent au nez. L’arrière-bouche, sur une corpulence moyenne, présente une légère astringence et laisse place au final, un peu court mais très classe. Il y a certains marqueurs dans une vie. Et les bières trappistes sont bien les mères de toutes les bières. Et rien ne remplace une mère.
