High fermentation, bottle refermentation. Blonde "Triple" beer, very aromatic, especially with cold hopping for a long aging period, gives it freshness and an incomparable bouquet.
Fermentation haute, refermentation bouteille.

Clear golden-amber color, small white head, some lace. Light fruity aroma. Medium-bodied. Fruityness, notes of honey, Belgian "tripel yeast", alcohol, some grassy hoppyness. Clean and reasonably enjoyable.

Bottled@HBF2013. Hazy orangeish golden colour with a mediumsized creamy head that leaves some lace. Aroma is nutmeg, grass, some sweet malts as well as slight spicyness. Flavour is bready malts, some toffee and mild spices, but also a bit rotten vegetably notes. Alcohol gives a nice burn in the finish.

Pours dark gold into a shaker. Bright white head with medium retention recedes to skim surface. Sweet tropical fruit and resin aromas. Sharp and full with sweet hay and mango upfront turning to warming sourdough before the lasting earthy bitter finish.

Draught at La Fine Mousse, Paris. Hazy deep golden, creamy head. Aroma of marzipan, pear and grass. Sweet with near full body and well rounded mouthfeel. Doughy malt with plenty of marzipan. some sugar and tropical fruits. Sweet and malty with fairly low bitterness in a mildly warming finish. Pleasant and mellow.

On tap at la fine mousse in Paris. Pours a dark amber with a collapsing white head leaving no lacing. Light fruity aroma. Kind of a cross between a tripel and a Belgian ale. Nice.

2012-10-09, draught at La Fine Mousse, Paris, 6-4-7-3-14=34
In the aroma there is a light impression of vegetables and herbs. Good malty flavor, balanced, but again there is a trace of vegetables; it’s still pleasant, with nice hopping and fruits, sweetish. Did it develop some unwanted fermentation character so quickly?
2012-10-02, bottle from La Cave à Bulles, Paris, 6-4-7-3-13=33
batch L12-37, bb Jan 2014
Hazy golden color with small head. The aroma presents a mix of fruits and vegetables, mild. Some malt flavor, some yeast character combined to a strange American sweetness; some spicy character overall, and relatively strong bitterness; it also has a very light herbal touch.
Pleasant, but less impressive than on tap.
2012-09-06, draught at La Fine Mousse, Paris, 7-4-7-4-15=37
Hazy amber color with generous head. Mild aroma, some fruity hops, but also traces of yeast and vegetables, maybe the result of high fermentation temperatures. Highly carbonated, with smooth mouthfeel; quite good sweet malt flavor, a hint of spicy yeast, nice fruity touch, and correct bitterness.
A good Strong Ale, with a wink to Belgium (yeast) and another to America (sweetness).

On tap at La Fine Mousse, Paris. Orange/golden coloured, medium sized white head, spicey caramel nose. Moderate malty, spicy and caramel with honeyish hoppy and slight alcoholic notes. Also some mild but pleasant fruity notes in the finish. Nice.
