(Previously labeled Blackberry Lambic). Blackberry is fermented by wild yeast and aged in oak casks for nearly a year, which creates a tart, complex beer. We then add whole blackberries, grown in Indiana, giving the beer a sweet, berry aroma that blends nicely with the tang of sour beer. The beer is bottle conditioned, which adds a zesty and refreshing carbonation. Blackberry is the perfect drink to share with friends over a plate of good cheese and fresh fruit.

(Old description) In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

Draft. Reddish beer with a purple head. Sour and light blackberry aroma. Sour and light acetic flavor with blackberry and light oak. Medium bodied. Sour and light acetic notes linger with blackberry and light oak. Nice balance.

Bottle from Jeff, thanks for the hookup. Pours a dark amber color with a hint of purple and a stinky off white head that dissipates instantly. Huge lactic tart in the nose and flavor faint berry and light earthy funkiness. Held up pretty well.

2016 bottle shared at our Fury for a Feast share. Thanks Jon! Pours a clearish plum color with a finger of off-white foam that dissipates. Lots of blackberry and currant aromas with oak. Still quite tart on the palate but still some nice fruit notes underneath. Lingering acidity with some faint mineral, dark berry and oak.

Wineglass showing deep purplish red with a finger of lightly tanned quickly dissipating foam. The nose shows moderately intense notes of clean blackberries. The palate is well carbonated and light bodied. Moderately tart with clean oak background throughout and light juicy flavors of blackberry.

Bottle @ UDRM, Oirschot. Pinkish orange color. Black and red berries in the very bretty and leathery aroma. Seems very sour at first, but it mellows fast and becomes very friendly. Some citrus and tartness. Very nice fruit lambic.

Batch 1 bottle, drunk I believe some time back in 2008-ish. Again, rating against an American Sour, not a Lambic.
Chilled, rested bottle erupts a few feet in to the air very forcefully. We got about 40% of the bottle remaining, with tons of sediment and carbonation. Deep violet-golden with a huge head, but much of that due to overcarbonation, I’m sure.
Very sour with both fruit and bacterial acidity proposing quite a bit of malic, lactic and acetic acid. Feels like there’s some wheat behind it, as well as light honey and biscuit. Brett adds brightness and the berries are quite lovely, being nicely integrated and providing pepper, currant-like notes and tons of acidity.
In the mouth it’s very, very, very sour. Intense amounts of lactic acid are bolstered by a good deal of acetic acid. Lots of oak tannin, but thankfully not heavily toasty. Texture is highly attenuated, but still provides a good suppleness and very light malt sweetness. Strong but tight carbonation and no alcohol or flaw. If you can get past the intense sourness, this is fine stuff.

Bottle courtesy of Milsem. Pours very hazy bluish red with a small frothy bluish pinkish white head that leaves some spotty trace on the glass while dissipating. Smell is fruity with crackers, lemon juice, blackberries, forest fruits, hay, dry soil, leather, apple cider vinegar and lemon zest. Taste is heavy sour and fruity. Mouthfeel is dry, tart, mouth-puckering and light to medium bodied. Finish is heavy sour with blackberries, lemon juice and apple cider vinegar. Nice blackberry character but a bit too sour.
