Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

750 ml bottle. Pours a hazy gold/amber with little head. Aromas of salty funk, old lemons, wheat, and sour fruit. Flavors of strawberries, muddled tart fruit, white pepper, and light toasted malts - with a bit of sweaty wool socks...

2017-02-11. 765ml bottle from BCL on Robson/Denman. Pours a slightly hazy golden with a white head. Aroma is barrel, somewhat similar to lambics (Alex :-P), some strawberry and peppery notes. Taste is pretty the same with moderate sourness and frutineas, quite dry, moderate to high carbonation. Very pleasant. 8-4-8-4-15=39 2019-04-07. At Alex's. Same batch. Very nice. No peppers anymore, so much of strawberries and other fruits. It's awesome. 8-4-8-4-16

Bottled February 22nd 2016.

Pours a cloudy orange yellow with a small and quickly receding head of foam.

Smells like wine infused with Brett. Strong Brett.

Brett and tartness rule with some honey like sweetness interspersed throughout. Tasty.

Very lively carbonation.

A very good sister.

Golden amber. Soft oaky nose with strawberries and peaches. Tart, full bodied but some what rounded. Decent but does t blow me away

A lightly hazed golden saison with a thin white head. In aroma, sweet fruity malt with light strawberry notes, light Brett, light lactic notes, very nice. In mouth, a nice mix of tart strawberry jam, light acidity, light Brett, light cork character, ground cherries, very nice and complex. On tap at Gnarly Barley.

Sample from bottle in front of ’Bierkoning’ during Carnivale Brettanomyces 2016 hazy orange with a small white head. Aroma and taste are of sour/acidic, taste like balsamic vinegar, some skunky notes, apricots, some sweetness, dry aftertaste.

THANKS for sharing RB people! Sampled 750 ml. bottle @ outside De Bierkoning during Carnivale Brettanomyces 2016! Some of their sister beers of Goose Island aren’t that great & plenty of the new vintages were lesser, overly sour etc. compared to what I remember them being. This one was just wonder as fitting for a show as phenomenal as the X-Files. Hazy orange with basically no head. Nose is big strawberry, honey, faint apricot, huge fruit & light honey. Taste is awesome strawberry, fruit is vibrant and lively, sweet upfront, sweet strawberry with honey leading into a complimentary sour, lightly puckering, this has balance, amazing fruit etc. this one & Halia are the ones that you need.
