Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels
Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Bottle, in front of the Bierkoning at Carnivale Brettanomyces 2016, with Bierkoning, Travlr, Zlotta, Kermis, Maakun, TheJvd, ShivanDragon and more. Cloudy golden color. Aroma’s of apricot (or other soft sweet fruit). Retronasal it’s sweet, apricot, pineapple maybe? Flavor is moderate to full sour. Medium bodied. Long finish, slightly dry.

Sampled @ bierkoning. Thanks for sharing rlgk. Appearance is weird, no head, and it looks like some kind of fruit juice. Smell and taste is quite fruity, tropical fruity, floral, sour. Quite lovely.

Bottle sampled in front of Bierkoning. Murky orange golden, looks like apricot juice. Lots of nectarine, peach, apricot, salty dough, light green leaves. Light sour and very light sweetness. Medium bodied with soft carbonation. Smells great but otherwise just decent.

Bottle sampled. Cloudy orange with a white head. Aroma of strawberry, lactic, vanilla. Flavour is above moderate sour. Light medium bodied with soft carbonation.

Bottle shared at Goose Launch. Very strawberry forward nose and some funky brett-like notes come out as it warms. Lots of tartness, young strawberry, vanilla cream, light honey and more funkiness on the palate. Tart and vinous as it warms. Superb.

Trübes orange goldenes Bier mit einer geringen weißen schaumkrone. Geruch sehr fruchtig, Erdbeeren, leicht säuerlich. Geschmack säuerlich fruchtig, reife Erdbeeren, gering holzig, gut!

3-4 oz bottle pour at ChurchKey courtesy of Eric, thanks! Hazy orange with off-white head. Aromas of stone fruit, light funk. Tastes of stone fruit, tart acidic notes, light funk, a bit of strawberry. Medium body with a dry finish. Pretty tasty though not sure I’d pay the $30 going price for a bottle.

Bottle shared at CBC Clerkenwell in London - big thanks to Kenneth. Pours cloudy pale gold with a scant, foamy white head. The nose holds light herbs, salt, lemon, wood and berries. Medium sweet flavor, moderately acetic, with pale bread, lemon, sweat. Medium bodied with fine carbonation. Sharp acetic finish, sweaty, with hints of wintery spices. Novel, but not terribly drinkable.
