Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels
Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

750ml bottle thanks to rich for bringing all the sisters. Pours out a hazy golden topped with a ring of a head. Nose is great wild strawberries sweetness and some nice tartness. Taste is more of the wild strawberries sweetness vanilla barrel and lots of pucker.

Bottle split at CBC Clerko, 15/04/15, thanks to Kenny. Hazed orange golden with a decent off white head that quickly dissipates. Nose is pissy straw, citric rinds, light tropical scorch, mandarin, earthy, light yeast. Taste comprises apricot, funk, pissy orange, earthy citric, pink berry tang, modest acidity. Medium boded, fine carbonation with a light acidic burn in a tarte fruit compote. Solid sour.

Craft Clerkenwell. Bruce’s UK Swan Song. Hazy gold beer, no real head. Palate is light, semi dry, mild fine carbonation. Mild lemon and a little Worcester sauce. Touch of red wine. Little floralness. Light dry finish. Overall slightly acid but it’s pretty drinkable.

Bottle sample at a sour tasting at kerenmk’s place. Thanks Stas & Vova. Cloudy yellow-golden. Lovely sourish aroma with strawberries, wine and lacto. Sour flavor, woody, somewhat vinous, fruity (some strawberries), a bit of sweetness, and lacto. Medium-bodied. Really good stuff.

Bottle shared at Bruce’s farewell drinks. Thanks to Kenny. Translucent orange / golden coloured pour with a fleeting fine white head. Aroma is big funky apricot, musty, little plastic, some sweet and sour, sour. Flavour is sour funky apricot and peach yougurt. Spicy fruit, funk, many layers, wheaty doughy grains. Palate is medium bodied, sweet and sour, crisp. Peppercorn. Pretty good.

Bottle thanks to Ken. It pours cloudy golden orange with a small white head. The nose is sour, funky, oak, vanilla, sherbet, peachy, sour strawberry and must. The taste is crisp, tart, sherbet, strawberry, orange tango, apricot, some acidity, candied citrus peel, alcohol heat, lactic and light spice with a dry finish. Medium body and moderate carbonation. Could be more sour.... Still solid.

Bottle at home. Has a hazy light orange colour with a fast fading carbonated head. Fruity aroma with spices, cloves maybe, strawberry, citrus, blood orange, forest floor and honey. Interesting! The flavour is fruity as well and has more citrus, pepper, orange peel and some mango. Mouth feel is slick and nice. A fruity ale and with a fantastic complexity. Has spicy tones in the background. Must be an amazing beer to food.

Sample at the 2014 Infected Chimipalooza on 11/01/2014. Slightly hazed bright golden pour with a medium white head that evaporates steadily to a film. Short strings of lacing. Aroma of berries, herbal wheat and funky yeast. Medium-bodied with flavors of tart berries, peppery yeast and oak. The finish is funky with a funky strawberry aftertaste. Solid beer all around.
