Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

750 ml bottle into tulip glass, bottled on 9/11/2013. Pours lightly hazy bright gold color with a small foamy white head with poor retention, that reduces to nothing fairly quickly. No glass lacing, and a fair amount of streaming carbonation. Aromas of big strawberry, peach, pineapple, lemon zest, green apple, pear, white wine, honey, oak, white pepper, hay, straw, grass, light musty funk, and yeast earthiness. Fantastic aromas with great complexity and balance of fruity/spicy yeast, strawberries, and wine barrel notes; with great strength. Taste of big strawberry, peach, pineapple, lemon zest, green apple, pear, white wine, white pepper, honey, oak, hay, straw, grass, light musty funk, and yeast earthiness. Fair amount of fruity/acidic tartness and spice on the finish; with lingering notes of strawberry, peach, pineapple, lemon zest, green apple, pear, white wine, white pepper, honey, oak, hay, straw, grass, and yeast earthiness on the finish for a good bit. Incredible complexity and balance of fruity/spicy yeast, strawberries, and white wine barrel flavors; with a great sweetness/tartness balance and zero cloying flavors after the finish. Medium carbonation and body; with a very smooth, moderately crisp/acidic, and slightly slick mouthfeel that is great. Alcohol is very well hidden with only a light warming present after the finish. Overall this is an outstanding wine barrel fruited saison. All around awesome complexity and balanced of fruity/spicy yeast, strawberries, and wine barrel flavors; and very smooth to sip on for the big ABV. A highly enjoyable offering.

Bottle - Sour and tart nose, white pepper and white grape. Cloudy yellow with a small white head. Pepper and a tartness with strawberry in the finish. Complex and fun. Nice.

Bouteille 75cl de et partagée avec Pierre T. Dorée sur un léger trouble, col blanc s’estompant rapidement. Arôme met de suite en avant le poivre blanc qui est ici dominant sans pour cela être dérangeant. Retrouve tout autant un rétro de fraise idéalement bien placé pour cette bière. Ici le fruité est naturel (du moins je l’espère) et on retrouve ce léger bouquet terreux fruité qui fonctionne bien avec le bouquet de la bière. Palais offre également sa part belle au poivre blanc qui est fort agréable. En bouche, je note un rappel aux bières ’farmhouse’ de St-Somewhere, principalement avec l’usage d’une levure de champagne qui ajoute une complexité marquée et qui balance parfaitement ce poivré léger et les fraises. Palais reste sec sur un résiduel fruité de fraise fort plaisant. Le miel ne se note pas particulièrement mais est probablement utilisé pour relancé la fermentation en bouteille?

Pale yellow, quite hazy. Fruity, lime, peach character, strawberry more apparent as it warms, sweetish, strawberries, hint of tartness, touch yeasty, good complexity on this one.

Cloudy blond colour with no head. The aroma is very fruity, blend of raspberry ans strawberry. The acidity is prominent, but also the berry juiciness, fresh feeling even after so many years. Very good beer.

Sour fruit bomb; besides that, there is some bread aroma, juicy flavor, mild vinegar note, some citrus peel in the final, and no astringency.
Excellent.

Hazy deep blond color with frothy head. Interesting aroma, very fruity, plums, peach, vanilla, sweet oranges, orange flowers; wonderful. Soft mouthfeel, highly carbonated; fruity flavor, sour, a bit flowery; very well balanced.

Beautiful golden crisp almost no head. Very peppery nose. Great mouthfeel. Strawberry is very present but the pepper really detracts. Tingly and effervescent. Lemonade sweetness, nice tart pleasent but spicy finish

750 ml bottle. Pale straw color with no carbonation. Aroma is honey, funky berry, spice and horse manure.

Flavor has a vinous note upfront with a pale grain body. Barnyard notes through the middle with a artificial berry note. It doesn’t give a natural berry flavor at all. It also displays a huge pepper note in the finish that is rather distracting. Texture is crisp but far from refreshing. I’m glad I didn’t spend $29.99 from this. Epic fail Adam, epic fail buddy.

750mL bottle, pours a hazy blonde with a off-white head. Aroma brings out loads of strawberries upfront, followed by a little champagne, followed by champagne yeast, and Belgian yeast. Flavour is very complex, with loads of strawberries, a touch of pepper, and Belgian yeast. Finishes on light notes of wine and lots of strawberries. Crazy how forward the strawberries are. ABV is completely hidden. An excellent elegant sipper.
