Ale with Strawberries, Honey, and White Pepper Aged in Wine Barrels

Inspired by an amuse bouche often prepared by the wife of one of our brewers, Scully brings white pepper, strawberry, and honey to a harmonious blend of “mouth amusement”. The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Pour is a murky reddish with a small white head. Aroma is a bit lactic with some berry and a nice yeasty ester. Flavor is sweet and fruity with a bit of white wine and candi sugar. Finish is a bit tart but nothing over the top. Not as good as Halia but still this is a fine beer. The perfect mix of fruit, yeast and barrel aging.

Bottle at Taps 25, Lansing. Tart, cobwebby nose with lots of berries, berry skin and wet grass. Sweet and sour body, dusty and floral, with berries and hints of lemon. Nice.

Pours golden color with white head. Aromas of strawberries. Tart strawberry flavor with a little black pepper and some earthiness. Light to medium body with lively carbonation.

Capped 750 from Total Wine in Folsom, CA. Pours gld with a transient white head. Aroma of sour strawberry. Med body at least. Flavor is sour/tart strawberry. Could be some honey - seems to coat my lips. It’s sour/tart and a bit earthy. Earthy in the nose! Really a very nice drink.

Pours gold into a tulip. Bright white head crackles and recedes to nothing. Pepper, summer fruit and hay aromas. Sweet honey and berries upfront turning to mildly sour marshmallow and pepper in the tart finish. Abv well hidden. Like others have said, it’s way too pricey - but I am ultimately glad I tried it...

750ml bottle. Cloudy golden, almost flat. Crazy nose, lemon, yogurt, berries, funk-ass. Lightly acetic. Quite sour and lactic, grassy, funky, lemon, grapefruit, strawberries, pineapple. Get the pepper in the finish. Lasts a while. Silky and a bit oily body. Very interesting and rather strange beer. Like it more the more I drink.

Bottle thanks to Rainer. Pours a cloudy yellow with small white head that lasts awhile. The aroma is strawberry and tart. Thin mouthfeel with light strawberry flavor and dry finish. Good

Bottle shared at the 8th Richmond Industry Gathering, 12/1/13. Pours a clear golden color with no head. Aroma of berries, spice, funk, pepper. Taste is tart berries and citrus, heavy pepper, mild funk. Medium bodied.

From a 75 cl bottle shared at Ryan’s on Christmas morning. Pours a clear gold with an off white head. Apple nose. Flavors of strawberry and white pepper. Medium bodied, high carbonation, tart crisp finish.

Little hazy pale yellow beer, no head. Aroma: pretty dirty, artificial bretta, vinegar acidity, hay, dirty and dusty. MF: soft carbon, medium body. Taste: grains, soup, bit dirty, white pepper, hay, spices, very weird and unpleasant. Aftertaste: soft bitterness, little sour, lemon peel, white pepper, dry, hay, little fruity. Who was the genius that thought it would be a good idea to put white pepper in beer? You know what, it doesn't even matter. Because even without the pepper it's just a skunky weird and dirty ale. Making sour beer is an art, and it's not given to everyone...
