Berliners have enjoyed drinking their “Weisse” since the 16th century. When the Huguenots arrived on the Spree shortly thereafter, a new term coined for the taverns throughout the city - Budike (from Boutique).
Up until the early 19th century, the innkeeper, known as Budiker, usually served the Berliner Weisse, a light beer made from wheat and barley malt, to which a top secret cocktail made from wild yeasts gave it its sweet and sour taste.
The "sparkling wine of the north", as Napoleon's troops admiringly called the beer, became the favorite drink of the whole city.

Bottle (from Systembolaget Rådhusesplanaden Umeå). Hazy golden colour, small white foamy head. Aroma is floral, and mild earthy notes with mild earthy tones. Flavour is citrus, floral, fruity and some mile tartness and mild earthy tones too. Quite watery palate.

Bottled 330ml. -Courtesy of Hrabren, shared with him & Marko, thanks! Hazy yellow coloured, small to medium sized white head, citrusy and mild yeasty nose. Lemony, yeasty, sourish and fruity with touch of apricot in the finish.

0.33 l bottle from Biermeisters by Foresters Feine Biere, Berlin. Shared with Marko and Ogi. Cloudy yellow, small off-white head. Aroma is yeasty at first, light ripe apple, after that nice lacto, lemony, also other citrus, berries, soft solvent. Intense sourness, lemony. Soft breast underneath. Refreshing. Puckering. Sour berries in the finish. Intense puckering finish.

0.33l bottle, huge thanks Hrabren for bringing it from Berlin to share with Ogi and me. Hazy yellow-golden body, off-white head. Citric tart aroma, soft, bit sweetish, mild earthy funk, yeasty, some stone fruit. Lean, dry, bit tart taste, yoghurty-citric, tea notes, not much bitterness, rosehip. Actually well-balanced, nice!

ABV: 3.6%. Clear light to medium yellow colour with a average, frothy, good lacing, mostly lasting, white white head. Aroma is moderate malty, wheat, herbs, citrus, moderate yeasty, tart - sour nose touch. Flavor is moderate sweet with a average duration, wheat, yeasty, citrus, yogurt - sourish. Body is medium, texture is oily to watery, carbonation is soft. [20231006]

Bottle @Ulfborg. Nearly clear light golden, white head. Fruity, citrusy, yoghurty aroma. Yoghurty, sourish flavour, fruity, refreshing.

Bottle @ fonefan tasting. Nice head with good duration. Color is golden. Aroma and taste are lactose acid, fruits, malt, hops and has a nice sour finish.

Frothy white fair mostly lasting head. Pale yellow colour. Light malty and hoppy very nice acetic aroma. Light bitter flavor. Very nice acetic notes. Week moldy. Average light bitter finish. Oily palate.
