Wild in character, a complex ale with dried fruit and clove aromas, and a satisfying dry finish. Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. Matilda pours a golden sunrise color with dried fruit and clove aromas, a spicy yeast flavor, and a satisfying dry finish.

Pours a deep reddish golden color with a decent sized fluffy beige head that slowly dissipates to a cap on top. Smells of sugary malt with pomme and light pitted fruit and a hint of spice and pepper to round out the nose nicely. The flavor is sugary sweet with hints of honey and light sugar. Heavy fruit flavors remind me of pear, tangerine and sweet orange. Hints of spice provide the only balance to the sweet malt and fruit flavors. Medium body with a moderate level of carbonation and a sweet almost syrupy mouthfeel. This is a nice Belgian strong, simple straightforward and quite enjoyable.

355ml bottle - Christmas present! Cheers Jac. 2011 vintage. Aromas of hay, resin, and floral notes. Good Belgian yeastiness in other words. Clear, pale, and golden, good white head & lacing. A few bits sinking to the bottom, probably due to enthusiastic pouring. Tastes tart and lemon sherbety, with a long, dry finish.

2012 Bottle; Matilda is my daughters name, also a 2012 vintage, so how could I resist? 2012. Fantastic nose, festive spice, a hint of strawberry and white peach and a lovely yeasty undertone. Lovely golden appearance with lots of lacing. The soft fruits from the nose carries through into the taste, with a hint of grass and spice with a wonderful candy finish. The Belgian yeast is prominent and suitably delicious. The beer has wonderful depth in taste. A suitably excellent beer: The second best Matilda from 2012 :) Botlle: A 12 month old on my daughter’s first birthday. The beer has not improved as much as I hoped after 12 months in the cellar. The nose has now become much more vinious, and the soft tones I noted last year have been subsumed by a lot of green apple, and more vinious and sherry notes. Down rating, sorry Tilly :( . 2020 a bottle from Tesco and bottled 3 years ago! Nose is brett, honey, funk, cherry, pastry. Taste is a clean brett, lots of funk, floral, banana fruit, leading to earthy spice, dry (presumably the brett) with the last remains of the candy sugar, cloves, pepper and spice in the finish. Very different than my previous experiences with the beer - not sure if it;s changed or I have in the last 8 years - probably both.

From a 12 oz bottle shared at home. Pours clear gold with a thick white head. Peach notes in the aroma. Malty flavor with notes of orange rind. Smooth finish.

Flaske delt med Egil på Cardinal des-12: ravfarget, med lavt skum. Krydret aroma, nellik og assosiasjoner til peppernøtter (kan det skyldes den sjeldne gjærsorten som iflg. bryggeriet er brukt?). Mild og god med ganske lav bitterhet, et deilig koseøl. Må sjekke om de har denne på polet.

Sample from the Decatur Craft Beer Fest. Dark gold and bubbly with a thin tan head. The aroma is pine, flowers, and a faint mineral note. The flavor is citrus sweetness and sourness. The palate is medium, hard, and crisp. Overall, this is a surprisingly refreshing and crisp ale. Very nicely balanced use of brettanomyces.

Tap. Pours hazy orange amber with a large creamy white head that leaves good lacing. Aroma is peach, yeast and citrus - orange and lemon. Flavor is about the same, medium sweet and a bit spicy with a lightly bitter citric rind dry finish.

Canned peach aroma, fruity and tinny. Clear orange, medium yellow head. Peach flavor, dry at first but ends in a crescendo of sweetness, never coming close to being cloying. Brief appearances of funk keep it interesting. Finishes with a nice malty peach combination. Lovely.

22oz bottle. Poured a relatively clear light-red/orange color with a small and quickly dissipating head. Aroma is some yeast notes, mild spice and fruit characters. Flavor is spice malt, with some fruity notes, nice and hoppy.
