In the world of cider there are also similar products such as the ice cider, which has its origin in Canada. This cider is obtained after fermenting the juice pressed from apples that are frozen on the tree. Thanks to the concentration of sugars, the resulting product has a higher alcohol content and is usually sweet.
In the Basque Country we have native apple varieties that are only grown on this land. Among them, there is one that makes a difference because of its characteristics. It’s named Errezile or Errezil Sagarra, a late ripening apple, acid and rich in sugars. Historically, this variety has been stored on a straw bed in the ganbaras (barns) of our farms. It has the ability to last all winter, losing water and wrinkling in a natural process of concentration and without rotting. It is the variety we use in Zapiain to make Bizi-Goxo ice cider.
Another important factor is also involved in the production process of Bizi-Goxo: This is the fresh air provided by the new team of our winery, formed by Egoitz, Mikel and Ion. It is the generational relay that has been asking for passage.

A 5€20 le petit verre, autant en profiter.
Couleur ambre, clair presque dorée, le tout laissant un léger filament doré au verre, pas de col.
Arôme de pommes acerbes avec un rétro-nasal caramélisé, pommes cuites.
Palais est plaisant et chargé en sucre concentré de pomme – effet sucre caramélisé le tout gardant une certain fraicheur acerbe et mordant de la pomme verte. Finement râpeux en fin de bouche avec une note fine grinçante aux dents.

Bottle: pours bright orange with no head. Aroma is apple, smokey, funky. Taste is sweetish, smoke. Very pleasant.

Aroma: raisins, brown sugars and red apples. Taste: sweet red apples, wood, brown sugars and fruit puree. Sticky and syrupy mouthfeel. Next one please!

Sample at the Sidra museum. A thick golden orange coloured pour with no head. Aroma is condensed apple puree, light tang, brown sugars. Fruit compot. Flavour is composed of intense apple fruit, condensed fruit. Brown sugars, intense tangy bitter finish. Palate is medium sweet, thick, syrupy, lovely.

Tap @ sopp 2018. Poured deep golden color. Ripe apples, sweetness, apple skin in aroma. Flavor has sweet apples, sugars, honey, sweet fruits. Awesome stuff.

Bottled. An amber cider. The aroma has notes of apples, and alcohol. The flavor is sweet with notes of alcohol, apples, and wood, leading to a dry finish.
