Strong Barrel aged Sour Ale. The Abbaye de Saint Bon-Chien is a strong sour ale of mixed fermentation, aged during a year in old wine oak barrels. The oak aging and the action of wild yeasts confer this beer’s astonishing wide range of aromas. Its outstanding komplexity, balance, roundness and long finish, are the fruit of the meticulous blend of selected barrels. On the palate the blend reminds one of fruity red wines with a pronounced balsamic sourness. The best way to enjoy a Bon-Chien is to serve it in an elegant wine glass at 16°C or 60.6°F paired with a duck breast or some panned foie gras for example.

Tap at Craft House. Brown-orange, flat. Nose is wine, vinegar, caramel, cherry, chocolate. Nice. Malty and sour. Sweet cherry and apple starts the flavor, then vinegar and basalmico, caramel. Niely tart, clean, lovely.

From a 75 cl bottle. Pours a clear deep amber with a scant head. Aromas are dominated by the burgundy barrels used in the aging. Flavors are herbal with tart red grape notes. Pretty drinkable after 16 years in a bottle.

750mL bottle, drunk 8/8/22. Mostly clear, leaving as much sediment behind as possible. Burgundy-mahogany with a slight ring of butter-tinged bubbles. Some light oxidation for sure, but doesn't seem gone. Definitely very sherry-like with raisin, red fruit and very easygoing sourness. At this point, if it ever was aggressively sour, it's mostly just tart, plummy, mineral-like and balanced red wine. No alcohol or flaw. Gets better and better with every passing minute (as it breathes). Grapes galore with great acidity but not sourness. Wonderful texture with well-attenuated malt. Just a plethora of barrel character. The red wine definitely the most prominent, but there's light whiskey-like dry spice and some grapeskin and alcohol-like grappa on the very end. This is absolutely insane at 18 years old. There's no overt oxidation and still it's vibrant with bright grape and tart yeast acidity. I'm guessing this needed at least 5 or so years to really loosen up and was still in its prime at 10. Even now this is a fantastically-balanced, flavorful beer that I'd gladly drink more of.

Appearance: cloudy ruby red, no head. Aroma and taste: fruit, oak, autumn leaves, some caramel. Dry, medium sour. Mouth feel: medium body, average carbonation. Overall: good.

Many Thanks for this Sour beer to CH-303. Vintage 2015 Limited Edition half champagne bottle. Bottle from a first trade with Asbjorn (early 2017). No alez odjazd, czego tu nie ma. Barwa czerwonawo-miedziana, metnawa, ze srednia piana, malo trwala waniliowego kremowego koloru. Pachnie intensywnie octem, beczka i wisnie. W smaku mega extremalnie kwasne, lekko octowe, wyraziste, przyprawowe, deren, mnostwo derenia, nieco rokitnika i jarzebiny, wyraznie dominuje tez beczka, obok kwasu to dwie dominujace cechy tego wybornego biere de garde na sposob sour. Mistrzostwo doskonale.
