Dry Hopped Wild Oat Pilsner - Collaboration w/ City Built Brewing Company. It is a little known fact that our good friends at City Built brew most of our wort. We all knew it had to be a non traditional hoppy pilsner. Brewed with a bunch of oats and heavily dry hopped with Saaz, EKG, and MI Heritage. We brewed two versions of this beer, CBBC's clean version is called Conurbanization. Our version was open fermented with german lager yeast, and finished with our house cultures. 660 bottles produced.

Can from Holiday Market. Pours a glowing neon straw with full two and half fingers of soapy foam. Dried hay, grass, white grape must and pear aromas. Nice pineapple, brett and horseblanket that lingers. Bone dry on the palate with some pear, mineral and subtle white peach notes that come out. Spritzy carbonation, light and crushable. Peppery Saaz lingers on the finish. Super refreshing on a hot day.

750 ml bottle into tulip glass; no bottle dating, but is a recent release. Pours slightly hazy pale golden/straw color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Light spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, orange, peach, pear, apricot, pineapple, melon, red/green apple, white wine, hay, straw, peppercorn, herbal, floral, grass, cracker, and white bread; with light notes of leathery/musty funk, white wine vinegar, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy/acidic yeast, earthy hops, and moderate pale malt notes; with great strength. Taste of big tart lemon, lime, orange, peach, pear, apricot, pineapple, melon, red/green apple, white wine, hay, straw, peppercorn, herbal, floral, grass, cracker, and white bread; with light notes of leathery/musty funk, white wine vinegar, and yeast earthiness. Light-moderate lactic tartness, peppery yeast spiciness, and herbal/grassy bitterness on the finish. Lingering notes of tart lemon, lime, orange, peach, pear, apricot, pineapple, melon, red/green apple, white wine, hay, straw, peppercorn, herbal, floral, grass, cracker, white bread, light leather/funk/vinegar, and yeast earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, earthy hops, and moderate pale malt flavors; with an awesome malt/tart/bitter/spiciness balance, and zero puckering/astringent flavors after the finish. Moderately crisp/clean finishing. Light-moderate increasing dryness from tart/bitter/spiciness and carbonation. Medium-high carbonation and light-medium body; with a very smooth, moderately bready/grainy, and fairly sticky/acidic balanced mouthfeel that is fantastic. Zero warming alcohol as expected of 5.4%. Overall this is an outstanding wild ale! All around awesome complexity, robustness, and balance of fruity/funky/spicy/acidic yeast, earthy hops, and moderate pale malt flavors; very smooth, crisp, clean, and refreshing to drink; with the modestly acidic/sticky/drying finish, not overly lactic. Fantastic well rounded Brett/Lacto complexity and balanced earthy hop presence; solid pils malt/oat backbone, with minimal residual sweetness. A highly enjoyable offering as expected. Great balance of wild ale and Pilsner style notes.

Sampled from the tap at 7 Monks. Pours a hazy pale yellow with a white head that dissipates to the edges. Aroma has oak and grains with light tart fruits underlying. Flavor has a great light tart fruits and oak with a cris grain backing.
