We are stoked to finally share with you the result of a passion project months in the making as the first of two new beers dropping Saturday. KONGOU represents the collaborative work and friendship we developed with Nashville’s own; @proper_sake_co.

KONGOU, or “Hybrid” in Japanese, is a Sake inspired Pilsner. In addition to the standard Pilsner barley grist, we incorporated steamed Sake rice and also rice from @proper_sake_co inoculated with Koji into the mash. The beer was then fermented with a blend of both Sake and lager yeasts from @bootlegbiology.

The result of all this is a beer that on the surface drinks like a refreshing unfiltered Pilsner. Upon taking a few more sips the presence of Sake rice, Koji, and Sake yeast all become apparent. The combining result lends the beer a distinct ripe pear fruitiness and creaminess, while still maintaining the crushability that a Crispy Boi should inevitably have.

Excellent. Lemon/cracker/dough/biscuit/wood/pepper/herbal/grass. Fairly bitter. Bready/grainy/sticky lt-med body. Crisp/refreshing/drying. Clean lagering, mild fruity sake. Spot on base style German pils. Clean malts, balanced noble hops.

Draft at Proper Sake. Pours a clearish gold with a fluffy white head that lingers. Lovely grainy, lager forward nose with bread, polished rice and faint lemon and koji notes. Grainy texture on the palate with a full body and mouthfeel. Good spritzy carbonation though. Soft and fluffy with some light noble hop bitterness. Really good final product.
