Cambium is a wild fermented golden sour made from a masterful harmony of saison yeast, our house brettanomyces blend, lactobacillus and saccharomyces. Cambium projects a beautiful hazy golden color with a sharp white head. The bouquet is strong with stone fruits like peach and apricot with a subtle, funky effervescence playing in the background. The flavor is light and refreshing with a delicate balance of tartness with its golden malt backbone on a smooth 6.2% ABV that won’t overtake one’s palette allowing for maximum enjoyment taste after taste.

Bottled. Cloudy gold pour fuzzed head. Bandaid and tart aroma. Sour fruit. Refreshing.

Pretty good little sour, full of tart berry and stone fruit with a heavy citric backbone and hints of white bread and cherry. Oak adds vanilla and a woody dryness to the back end, while the finish offers a lingering white bread fade with the slightest touch of leather. Tasty.

Draft at Craft Brewed. Pours a clear burgundy with a finger of foam that dissipates. Tart cherry and berry aromas with some light oak, leathery notes. Smooth and drinkable. More cherry and cherry pits on the palate. Light cherry sweetness then tartness. Maybe a touch too acidic on the finish, but solid overall.
