A Skagitonian blend
Ale conditioned with honey
Not everything fits neatly in little boxes. This blend contains beer beer from our first coolship batch, made both with and without the addition of our house yeast, as well as younger barrel and foudre aged beer. We use hyperlocal ingredients and 100% native yeast, ferment in oak, and blend to taste. Description: A blend of mature barrel-aged beer and stainless steel fermented beer, inoculated with coolship wort and bottle conditioned with Skagit Valley blackberry honey from The Valley’s Buzz
Components:
69% Batch #5, brewed 5/1/18: High protein wort made from Pilot pilsner malt, raw wheat, malted wheat, and flaked oats, with half the batch transported hot for overnight cooling and inoculation in our coolship with the addition of aged whole leaf hops. The majority of the coolship wort was then transferred to barrels for extended aging, but a portion of it was also added back to the other half of the batch for fermentation in a stainless steel tote.
16% Batch #3 blend, brewed 3/27/18: NZ151 Pale with wheat and rye, fermented in open stainless steel totes with secondary fermentation in a horizontal foudre purchased from American Solera, along with a portion of Batch #6 (Pilot Pils Blonde Base), and then transferred to 225L barrels for additional aging.
15% Batch #4 blend, brewed 4/19/18: “Session tripel” fermented in open stainless steel totes with secondary fermentation in a horizontal foudre purchased from American Solera, along with a portion of Batch #6 (Pilot Pils Blonde Base), and then transferred to 225L barrels for additional aging.

Grains: Pilot Pilsner Malt (5, 4, 6), Raw Wheat (5, 4), Malted Wheat (5, 3, 4, 6), Flaked Oats (5, 6), NZ151 Pale Malt (3). Flaked Rye (3), Vienna Malt (3), Munich Malt (4), Acid Malt (5, 3, 4). All purchased from Skagit Valley Malting.
Hops: Pacific Northwest Perle (5, 6), Willamette (3. 4), and Mount Hood (3, 4) from Hopsteiner, aged Washington whole leaf hops from Hollingbery and Son.
Other Ingredients: Municipal Water from the Judy Reservoir; Blackberry Honey from The Valley’s Buzz (for bottle/keg conditioning); our house culture of native Skagit Valley yeast.

Appearance - 8 | Aroma - 7 | Flavor - 7 | Texture - 8 | Overall - 7.5
750mL bottle, pours a cloudy yellow with a small white head. Aroma brings out wild yeast and some light stone fruit. Flavour is along the same lines, with lots of wild yeast, light stone fruits, and a touch of oak. Wild and oaky. Very nice.

Bottle at Salud. Clear golden yellow color white head. Aroma of dusty pepper and subtle funk. Taste has light fruity esters and light funk. Tasty
