Ale conditioned with honey
Not everything fits neatly in little boxes. This blend contains beer beer from our first coolship batch, made both with and without the addition of our house yeast, as well as younger barrel and foudre aged beer. We use hyperlocal ingredients and 100% native yeast, ferment in oak, and blend to taste. Each of our products will lead you down a garden path, to beautiful places you may not have expected to go but we hope you'll enjoy. (from label, 2nd edition, packaged 1/16/19)
Description: A blend of mature barrel-aged beer and stainless steel fermented beer, inoculated with coolship wort and bottle conditioned with Skagit Valley blackberry honey from The Valley’s Buzz
Components:
69% Batch #5, brewed 5/1/18: High protein wort made from Pilot pilsner malt, raw wheat, malted wheat, and flaked oats, with half the batch transported hot for overnight cooling and inoculation in our coolship with the addition of aged whole leaf hops. The majority of the coolship wort was then transferred to barrels for extended aging, but a portion of it was also added back to the other half of the batch for fermentation in a stainless steel tote.
16% Batch #3 blend, brewed 3/27/18: NZ151 Pale with wheat and rye, fermented in open stainless steel totes with secondary fermentation in a horizontal foudre purchased from American Solera, along with a portion of Batch #6 (Pilot Pils Blonde Base), and then transferred to 225L barrels for additional aging.
15% Batch #4 blend, brewed 4/19/18: “Session tripel” fermented in open stainless steel totes with secondary fermentation in a horizontal foudre purchased from American Solera, along with a portion of Batch #6 (Pilot Pils Blonde Base), and then transferred to 225L barrels for additional aging.

Grains: Pilot Pilsner Malt (5, 4, 6), Raw Wheat (5, 4), Malted Wheat (5, 3, 4, 6), Flaked Oats (5, 6), NZ151 Pale Malt (3). Flaked Rye (3), Vienna Malt (3), Munich Malt (4), Acid Malt (5, 3, 4). All purchased from Skagit Valley Malting.
Hops: Pacific Northwest Perle (5, 6), Willamette (3. 4), and Mount Hood (3, 4) from Hopsteiner, aged Washington whole leaf hops from Hollingbery and Son.
Other Ingredients: Municipal Water from the Judy Reservoir; Blackberry Honey from The Valley’s Buzz (for bottle/keg conditioning); our house culture of native Skagit Valley yeast.

A small taste @ Remedy, cellar's treasures tasting. Pours cloudy yellow with a medium head. Aroma is complex sour malts with some fruits. Flavor is complex sour malts with some fruits. Very nice.

5oz shared with Phill during Zwanze 2022. Edition 4. Appearance: cloudy straw with a huge a bit tan head. Aroma: multi layered, funk, barrel, a bit fruity. Taste: very weird, hard to describe, quite dirty, some food traces, maybe a bit of butter. Overall: nah, I am not sure that it was a great idea to blend this.

(Draught at Moeder Lambic Fontainas, Brussels, 20 Oct 2019, edition #2, 6.1%, unsure if that's a separate entry or not) Golden colour with big, lasting, white head. Fruity, sourish nose with citrus, lemon, tropical fruit, barnyard and brett. Fruity, tart taste with notes of grapefruit, green grapes, apples, passion-fruit, barnyard and a dry and tart finish with low bitterness. Medium body, quite dry. Complex, fresh and really tasty. Very nice.

750ml bottle pours out hazy golden topped with a white head. Nose is nice tart funky notes spice some floral and a little fruit. Taste is more of the nice tart notes spice and pretty complex.

Draft @ BxlBeerFest 2019 - day 2. Dorée, col blanc. Arôme sur bouquet plaisant, farmhouse, effet levure sauvage, fruité fermenté avec un agréable bouquet fleuri rappelant les fleurs de sureau. Palais léger, pointe funk/acidité mais franchement bien maitrisé avec un léger boisé-chêne. Fruité sur un côté brett de groseille à maquereau, raisin blanc voire abricot. Effervescence moyenne voire haute avec une note aigrelette qui persiste en fin de bouche et remet en avant le caractère foudre.

Touch of green apple, light honey and mild funk. Cloudy yellow with a small white head. Light Apple, touch of pineapple and some overripe funk. Decent.

Oxford Tasting, bottle
Cloudy blond colour. The aroma is mildly funky, fruity, light manure. Soft mouthfeel, delicate but pervasive fermentation character, with stone fruit, and mild wood in the finish.
Rich and elegant.

Cloudy, pale, with a medium head. Has a nice bretty, dusty aroma. Light with a dusty yeast note. Mellow, fruity, complex. Refined brew. The honey adds a bit of sweetness, and the barrel adds a touch of tannin. Good stuff.
