Gold Shoes is a farmhouse ale aged in neutral French oak puncheons conditioned on local spent peaches. Brewed with Pilsener malt, malted and unmalted wheat, and flaked oats, and hopped with German noble hops. We fermented this beer warm with a Belgian yeast strain for a citrusy, estery yeast profile before transferring to puncheons with our mixed culture, to contribute balanced funk with soft, refreshing acidity. Conditioning on organic spent peaches after barrel aging adds complex stone fruit aromatics with a subtle peach flavor.
