Hops + Brettanomyces + Hops
The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.
The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.
This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

On tap at Vrteška. Hazy yellow body, white head. Big hoppy aroma, herbal and lime note, brett present. Soft creamy body, lovely bubblegum hoppy notes, slightly tropical, Sorachiish, yet no Sorachi again. Brett. A lovely beer really.

Unclear yellow color with a fine white head. Ok lacing. Fine intensity in the aroma. Medium body and a fine carbonation level. Ok balance between sweetness and bitterness. Mellow fruity, yeast, herbal/grassy and citric hoppy flavor. Nice tasty and fresh beer.

Tap at Alehouse. Pours slightly cloudy amber. Aroma is funky brett with some fruity hops in the background, but really mostly stables and the likes. Body is medium, with little sweetness and an oily texture, but a sticky sweet palate. Not so much IPA left in this one, more like a Brett saison without the the typical yeast spiciness. Okay.

330ml bottle. Hazy/cloudy pale orange colour with a one-two finger frothy white head. Aroma is hoppy, lots of citrus orange and lemon, mango, slightly sour. Taste is tart fruity citrus, orange, mango, slightly sour flavours, yeast notes are there after the fruitiness but aren’t huge, slight floral, pine. Moderate bitter dry finish, fairly soft carbonation, oily texture.
Sidenote: Label suggests either drinking fresh (first 3 months) as a normal pale ale, or letting it mature for several more months so it develops more complex flavours. That’s cool, but perhaps they should print the bottling date so we have some idea of how fresh it is? This could have been sat on a shelf for a year already for all I know.

Sampled from tap at ’In de Wildeman’ during Carnivale Brettanomyces 2016. Slightly hazy, golden amber with a white head. Sweetish, fruity and a little funky aroma of mango, passion fruit and orange. Sweetish, already slightly bitter, slightly funky and fruity taste of mango, passion fruit and some orange, followed by a medium long, moderately bitter, quite grassy and dry finish. Medium body, slightly creamy mouthfeel, soft carbonation. Nice!
