Hops + Brettanomyces + Hops
The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.
The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.
This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

Bottled. A hazy golden beer with a huge white head. The aroma has notes of lemons, straw, brettaonmyces, and malt. The flavor is malt, oranges, and brettanomyces, leading to a tart finish.

33 cl bottle. Pours hazy yellow with a small white head. Aroma is citric and smooth fruity. Crisp fruity, bitter and smooth fruity. Dry,bitter and crisp hoppy finish.

(Thx!) Sampled draft @ Tilquin English Beer Festival 2016. Very hazy orange, creamy white head. Nose is green grass, fruity qualities, very low plaster brett touch. Taste is blue cheese hops, beautiful is this Sorachi Ace, green grass, creamy little in the way of brett, creamy body. Blue cheese hops presumably Sorachi Ace make me very happy.

Draft @ Tilquin English Fest ’16, courtesy of and shared with the fine Belgian RB crew. Léger orangé trouble, col fin blanc. Arôme au nez fruité, rétro prenant de brett gardant cette signature basique de Wild Beer, le tout ponctué par de fines effluves houblonnées d’agrumes. Palais oscille sur l’aigrelet tout en restant correct, le tout est aidé par de fines notes de levure brett, rétro est finement fleuri avec des pointes de citron. Au final, la couverture brett est un peu trop dominante par rapport aux houblons.

From Tap. Fast klare goldgelbe Farbe, geringe weiße Schaumkrone. Geruch sehr hopfig, grasig bitter, floral. Geschmack floral hopfig bitter, grasig, trocken, Kokosnuss.

Draught Keg, maybe, but sporting a textbook B.C."H.", hazy orange-golden beer. Rainwater, faint New World hops, orange/citrus in the finish. Spicy, other grains’ flavour; hops are less obvious in the mouth, no doubt due to the Bretts, of the floormop persuasion. Light body, bit slick. Not overwhelming, thanks to the (wrong) Bretts.

At Mrks. Bottle shared by Mrk! Hazy fresh looking gold with white head. Sweet fruit, sour lemon peel, yellow fruitella candy, bitter green leaves, yeasty doughiness, light spices (fresh coriander). Light sweet, light sour, under medium bitter. Medium body, light carbonation, very dry bitterness through an otherwise quite fruity taste. Nice refreshing.

Bottle shared thanks to Mrk. Hazy light golden with fizzy white head. Pineapple, lots of citrus peel, herbs, hay, bitter green leaves, a bit funk and dust, dried unripe fruits. Light sour and over medium bitter. Medium bodied with very dry feel. Unusual stuff, but too bitter maybe.
