The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.
The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.
This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

Bottle shared thanks to Mrk. Hazy light golden with fizzy white head. Pineapple, lots of citrus peel, herbs, hay, bitter green leaves, a bit funk and dust, dried unripe fruits. Light sour and over medium bitter. Medium bodied with very dry feel. Unusual stuff, but too bitter maybe.

Bottle from Craftissimo at home. Hazy dull yellow pour with dense white head. Aroma is piercing sour brett with hoppy bitterness - citrus peel, funk. Taste isn't as funky, but sour and bitterness prevails. Fine carbonation is nice. Straightforward citrus and brett-driven IPA. Not to my taste but solidly executed.

Draft @ LCBF 2015. Pours a hazy yellow color with a small white head. Has a fruity malty spicy citrus hoppy aroma. Fruity malty spicy weak bretty citrus hoppy flavor. Has a fruity malty citrus hoppy finish with weak bretty hints.

33cl bottle. Hazy orange with a coarse-grained white head. Smells of lemons and brett, plus some subtle pine. The taste is dry, bitter, a bit sour and salty, with notes of brett and grapefruit. Crisp and refreshing.

Pale golden beer. Wheaty aroma. Flavour caught me by surprise. Tangy fruit, quite sour, not gose-level but quite sour at first. Bready quality too. Itโs not for me but I canโt honestly say itโs a bad beer.

330ml bottle. Pours an orange golden colour with a big foamy white head. Nose of citrus zest, grain, funk, hop resins. Flavour is grainy, tart, spicy with tangy citrusy grapefuit, pine, yeasty notes and some woody bitterness. Medium bodied, soft to medium carbonation, dry tangy bitter finish. Nicely drinkable.

Keg at BrewDog Sheffield. Dark gold, hazy. A little bit of head. Milky sour aroma, dominated by the yeast. Bitter/sour taste, refreshingly sour but the acrid astringency in the finish was a bit much for me. In my humble opinion, not sure what it wants to be and sits uncomfortable in the middle. Having said that, itโs got character and bags of flavour.

Pours slightly hazy golden with a white head. Aroma has notes of malt, citrus, grape and chalc. Taste is medium sweet and medium bitter with a long citrus and orange finish. Body is medium, texture is thin to oily, carbonation is soft.
