The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.

The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.

This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

Alewife, Queens tap: pours light gold with a white head. Aroma is bretty funk, some sugar, some earthiness. Taste is lightly bitter brett. Slightly sweet. One of the better beers from this brewery.

Bottle @ Christers. Gusher that pours hazy yellow with a white head, lacings. Aroma of light malt, yeast, brett, fresh fruity hops, grass, citrus. Flavor is malt, yeast, bretty, light spice, hops, grass, citrus, lemonpeel. Medium body, average carbonation, dry and light bitter finish. 061015

Bottle @ Aarhus tasting. Hazy golden with a white head. Aroma is sweet, malty, bretty and moderate hoppy - citrus. Flavor is quite sweet and moderate bitter. Dry and moderate bitter finish. 061015

Bottle, 5%. Hazy yellow with medium white head. Aroma is malt, fruit, brett, citrus and earthy. Flavour is malt, fruit, hops, brett, citrus, little grapefruit, spicy, little earthy, little sweet, medium dry, little lemon and medium bitter.

Bottle. Nice head with good duration. Color is golden. Aroma and taste are hops, flowers, brett, citrus and malt. Nice and easy drinkable.

330ml bottle. Clear, orangey golden colour with huge, frothy, half-way lasting, minimally lacing, white head. Fruity hoppy and fruity yeasty aroma, intense notes of apricot. Taste is also fruity hoppy and fruity yeasty, notes of apricot, apricot liqueur, some yeast spiciness, a tart touch. Though the aroma is slightly monotonous, it has an inspirational quality due to its purity; the higher complexity in taste is welcome, albeit paid at the price of imbalance.

Bottled at Beer Fes Osaka 2015. Golden orange color with medium head. Tangy nose, peaches, oranges, mango, funky brett. Nice funky flavor blending with the solid hops. Good stuff.

Bottle at GJBF Osaka 2015. Evolved a light gold pour with a great hoppy nose of dank tropical fruits, medium bodied with a dry finish. Great fruity flavor, way better than madness.
