The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.
The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.
This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

4 oz pour on draft at ChurchKey. Hazy yellow with off-white head. Aromas of citrus fruit and peel, floral notes. Tastes of floral notes, citrus fruit and peel, subtle Brett. Medium-light body with a dry finish. Solid but would like a bit more Brett.

Draft sample (guest tap) @ Jester King. Aroma is citrus, lemongrass mixed with a solid Brett character. Flavor shows the Brett much more than citrus. Notes of shoes leather, moldy yeast and shows me a lingering Brett yeast after the swallow. The Brett actually hangs on my tongue for a good amount after the sip. More Brett then Funk. Extremely dry texture. I enjoyed this!

Draught at In De Wildeman, for Carnivale Brettanomyces. Creamy, irregular, sticky, yellowish white head, cloudy straw blonde colour. Aroma of grapefruit, mango, dry white wine, grass, pine needles, kiwi, strawberry yoghurt, leather, gooseberries and pond water - a bit weird, like most of this brewery’s beers, but not necessarily unpleasant. Crisp and fruity onset, bit minerally, salty accent and spicy yeastiness, soft mouthfeel, leathery Brett effects overpowered by a long, dry, resiny hop bitterness. I am still not entirely convinced the hoppiness of an IPA and ’wild’ yeast combine well, but this one was surely enjoyable.

Clear pale yellow beer, creamy white head, unstable, adhesive, leaving a nice lacing in the glass. Aroma: very soapy, artificial brett, floral, more soap, a bit off. MF: ok carbon, medium body. Taste: sourish, dirty, sulphur ('putje'), citrus, pretty soapy, little bitter. Aftertaste: soft bitterness, soapy, artificial brett, some citrus.

Bottle at Konttori, Tampere. Hazy yellow color, small white head. Grassy, yeasty, wheaty, lemongrassy aroma. Light-bodied to medium-bodied. Citrus, tartness, wheaty ipa. Refreshing.

Bottle sample at a sour tasting at kerenmk’s place. Thanks Ariel. Cloudy yellow with a white head. Nice aroma of funk, sweat, and fruity and slightly "green" hops. Dry flavor, kinda funky, with fruity, floral and "green" hops, and a decent bitterness. Medium-bodied.

Bottle - Sweet bretty fruit, some mango and some grapefruit. Hazy gold with a rich frothy white head. Light mandarin, light funk, some bitterness, dusty notes and a dry finish. Pretty decent, not as bright as the nose suggested but still pretty good.

Bottle: Poured a clear bright yellow color ale with a huge white foamy head with excellent retention and some lacing. Aroma of light citrusy hops with funky Brett notes is quite nice. Taste is also dominated by light citrusy notes with some fruity notes and some funky yeasty notes. Hops are not the dominant factor here but the yeast strain is so great that it doesn’t matter. Body is about average with good carbonation. Nice mix of drinkability and complexity with quite an original spin on the style.
