The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.
The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.
This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

(Draught at In De Wildeman, Amsterdam, 27 July 2017) Pale amber colour with frothy, white head. Malty, fruity nose with citrus, orange peel, crisp-bread and spicy aromas of brett. Malty, spicy taste with notes of dried apricots, orange peel, brett and a balanced citric bitterness. Medium body, mainly dry. Fresh and tasty, with an interesting brett character. Nice one.

Keg 1/3 pint (flight of beers) at Craftsman Company / Excite the Enthusiast Coffee & Ale House, Aberdeen. Golden colour. Grassy aroma, notes of brettanomyces. Flavour of dust, grain and brett. Not a beer I’d buy again.

Draught at Bryggerifestivalen 2017. Shared with Finn. Frothy white head to a misty golden body. Lacing rings down the glass. Farmyard nose, dry. Oily hops, earth, and brett to the taste buds. Resinous bitter hops to the ending. Refreshing. (Trondheim 04.08.2017).

(Keg at Angleterre, 20170626) The beer poured pale golden and clear. Its head was medium sized and white. Aroma had fruitiness and sweetness. Palate was medium bodied with medium carbonation. Flavours were fruitiness, perfume, sweetness, malts and bitterness. Aftertaste was sweet and bitter. A brew with way too much perfume-like components.

Caňa en Cimmeria 07..06.. 2017.(r26). Color amarillento velado con espuma blanca persistente. Sabores frescos herbáceos con ligeros ácidos secos y cítricos. Cuerpo ligero fácil de beber algo carbonatada. Refrescante. Buena.
