Hops + Brettanomyces + Hops

The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.

The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.

This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

330ml bottle at home during a mini tasting session with myself on 1st June 2018. Slight haze to the golden body, decent white crown on top. Light, but bitter citrus nose, taste also leaning towards citrus fruits, but sweeter than the aroma intimated.

Bottle, 0.33l. Aroma of citrus, melon, passion fruit, brett, herbs and pine. Pours cloudy golden color with thin creamy white head and sparkling appearance. Taste starts light sweet fruity and malty, following is funky and herbal, mouthfeel is dry, while finish is medium bitter. Medium body, slick texture and average carbonation in palate. Fresh, funky and wild...

On tap at Clock Block. I have almost saison like feeling of this one. With bitter sour hoppy finish. Pours yellowish with small white head. As beer gets warmer aroma let's you know this is wild and may be sour beer. Taste is lightly sour, fresh hops, yeasty character. I'm confused of this one but I guess I like it.

0.33 l bottle, shared with Višnja 666 and Pilot Goran, thanks! Pale golden, small off-white head. Spicy and citrus aromas. Strong citrusy profile. Funky and yeasty background. Very light sourness. Light body, soft to moderate carbonation, very light finish. Hops lost?

At a tasting, thanks, small bubbly fizzy head, murky lightish orange color with lots of yellow hues, aroma of minerals a bit over ripe citrus and a hint of peach, same traits in flavor with a light soapy bitterness. Nice but nothing to write home about, expected more.

Fantastyczna IPA, pelna chmielu i bretow. Po zabujaniu moim kieliszkiem Teku wszystkie aromaty od cytryny po gozka pomarancze tanczyly wokolo mojego nosa. Srednia piana i srednio trwala, jaskrawa lekko mglista barwa. Najsilniejszy jest tu aromat, przepieknie pachnie, ze nawet Al Pacino tanczac Tango wolalby zapach tego piwa niz mydelka ktore wyczol u partnerki w nagrodzonym Oscarem filmie 'Scent of a Woman" Martina Bresta. SSmakowo oprocz tej dominacj swiezej chmielnosci dochodzi lekki i przyjemny, a zarazem delikatny kwasek. Fantastyczne smakowo i zwlaszcza czuciowo
