This is our AZ prickly pear and citrus zest IPA collab with Other Half Brewing Company out of Brooklyn. You may have noticed their version was pink, and ours pale yellow. Why? Well, we racked our brains, tore through old brew logs, and tore our hair out. Then we found the culprit... SCIENCE!
You see, while brewing in BK, we added the sweet nectar after fermentation took place. The pH was 4.2 ish and 65 degrees, then crashed to 34. This along with carbonic acid, esters, and alcohols created a stable environment for the juice. The polyphenols from the dryhopping probably played into this as well.
We added the juice at whirpool while still boiling. The pH was 4.9-5.0 and quite unstable. Scienctific principles would show the colder, or in this case hotter, the temperature, the stronger the enymatic catalyst is. In other words: Heat and a higher pH made the color volite and dissipate.
The beer is still amazing! It shows we are constantly learning and developing and that will NEVER end. It also shows each brewer and brewhouse is different and unique!

Keg at Mikkeller Shoreditch, 08/11/18. Hazed pinkish with a decent crimson cap. Nose is pink berry sherbets, bubblegum, citric zest, grass. Taste comprises pink grapefruit, water melon, grassy bite, herbal notes, straw, airy malts. Medium bodied, fine carbonation, semi drying close with modest hop bitterness. Passable number.

Mikkeller Shoreditch, Keg. Hazy pink grapefruit colour beer, small pale peach colour head. Smooth palate, mildly dry, decent fine carbonation. Soft malts. Tangy floral fruits and red berries, plenty of that dry slightly weird prickly pear flavour. More floral fruits and a dry slightly bitterish finish. Interesting and drinkable.

[5/11/17] Can shared by fonefan at Mikkeller & Friends in Copenhagen. Cloudy golden. Fruity and oniony hops, dry, "green", slightly vegetal.

On tap at Arizona Wilderness, pours a cloudy orange with a small white head. Aroma brings out lots of dank piney hops, lots of resins and just enough caramel malt. Flavour is bursting with loads of piney and resinous hops, with just enough caramel malt. Wonderfully made, with exceptional balance. Fantastic.

Poured up on tap at the brewpub where it exhibits a nice thinly hop hazed gold body that supports a near white head of foam that leaves behind some thin sheet lacing. The aroma offers up fruity mango, pineapple, cantaloupe and then a modest onion danky spiciness. The taste delivers a dynamite blend of sweet soft mango, pineapple and cantaloupe followed up quickly by a modest degree of bitter onion hop dankness. The balance is superb as it’s juicy and bitter and then as it warmed some a pleasing thin bready cracker malt like character surfaced and enhanced the beery harmony going on here. Wow! Love this.
