Seven malts were used to create deep flavors of coffee, chocolate, caramel, and molasses. A hint of bitterness and herbal character from carefully selected European and American hops help support the monolithic maltiness. This beer then waited patiently as it aged in cognac barrels.

375ml bottle shared at Hanging Bat, pours a murky black with some foamy, beige head. Nose is almost vegetal with plum, malt, date, fig. Flavor is better with chocolate, malt, a little toast, toasted wood, vegetal, perfume, date, fig. Oily, full bodied finish.

Bottle at the hanging bat. Pours black, nose is smoky, chocolate, plum, dates, biscuit, taste is dry, biscuity, plum, chocolate, sweet.

[1/30/16] Bottle sample at the Encomium bottle share, after RateBeer Best awards ceremony at Hyatt Vineyard Creek Hotel in Santa Rosa. Thanks everyone who shared bottles! Black. Chocolate, cognac, fruits, wood, vanilla. Sweet, sourish note. Full-bodied.

Sample at the brewpub during Jackie O’s 10th Anniversary Extravaganza on 12/04/2015. Brownish-black color with a medium beige head that diminishes gradually to a film. Patchy lacing on the glass. Aroma of oak, cognac and malt. Full-bodied with flavors of cognac, oaky tannins, roast malt and dark chocolate. The finish is oaky and malty with a mildly boozy cognac finish. Good beer all around.
