Cantillon Blåbær Lambik a lambic with bilberries added and produced for Ølbutikken in Copehagen, Denmark. It is produced in very limited quantities and is generally released sometime during the summer. It is released in both 37,5cl and 75cl bottles and is 5% ABV. Blåbær Lambik was first released in 2005 and has been released every year since then except 2006, and 2008. Though the word blåbær translates in English to blueberry, the fruit used in this lambic is the European bilberry which is very similar to the American blueberry. The fruiting process for this lambic consists of putting fresh bilberries directly into the barrel with the lambic. Source : Lambic.info

2015 750mL bottle drunk 9/20/17.
A beautiful robe of violet-magenta shows good clarity in the light, leaving the plentiful sediment behind. Pink-tinged white head shows modest retention for the style, eventually fading to ring.
The nose is just filled with beautifully expressive fruit, side-by-side with tart bacteria/yeast creating wonderful layers of complexity. Sniffable to perpetuity, it's both tart, juicy, tannic and even somewhat vinous, yet never "sweet" or "sugary". Nor is it too sour, achieving a good mix of both fruit and bacteria acid while lively Brett adds band aid, light lime and other soft funk and mineral. No alcohol or flaw. Very high strength of aroma.
Similar fruit flavors abound, tickling the tongue as plentiful Brett and lacto add a lightly puckering character and both fruit and barrel tannin soften the blow (though it's never terribly sour), mostly just very tart. The fruit is well-integrated again and the carbonation quite engaging, but it's markedly thin, seemingly over-attenuated and phenomenally bone dry, to the point of fault. It's pretty rare that under-malting and/or thin, washed out texture is a thing I get from Cantillon (or 3F for that matter) so this was even more disappointing. Just didn't have enough malt depth/suppleness. Obviously I'm not expecting it to be sweet, thick and richly malty, but it was noticeably less than the standard and caused a lot of astringency to build up on the finish. Assuming this is just a bottle or batch variation and still enthused to drink more Blabaer.

2014 vintage at Himmeriget, Copenhagen. Aroma is tart and sour red fruits, bretty funk, barnyard, subtle blueberries, some wood. Flavour is quite tart and medium to heavy sour. Body is medium. Complex yet easily drinkable, lots of nice funky barnyard notes besides the tart and sour berries. Maybe not the ultimate Cantillon, but quite lovely.

Funky, tart and funky farmyardy with some jammy blueberry juice and hints of sourness.

Notes from August 2009 Separate '05 & '07 bottles shared under the admissions tent lights at BCTC late on Saturday. Too many spitters & not enough swallowers, as there was still some left once they were passed around & most of us turned in. In comes the late-night lush that is moi to make sure nothing goes to waste. :) Double-fisting & always prepared, one comes out a rusty, yellow brown & not very pretty. The second, prettier. A cherry stained purple, with a dusty blue head. A sour lemon yogurt-sort of smell carries off the top of the older bottle, while the newer brings just mainly boxed, dusty blueberries. Taste was big in both directions. Not a real fan of exhibit A, as it was too much cheese & vinegar, & too little fruit. Fruit pits if you want to be picky, minerally, with a regurgitated stomach acid/gueuze sort of burn. Not exactly knocking it, just a little disappointed. It was a decently pungent Cantillon, but that's not exactly what I came for. The 07 was quite tasty though, though probably less complex. Super earthy & upfront blueberries, strong wheaty presence, barrel, & just a bit cidery on the end. Neither quite tannic, but the big fruit in the fresher bottle sold me. Both times, a little too frothy. B was thicker, more rustic then A. A puckered me up plenty, B while slighter, still had me clenching some. Sad to say that, however uneven, this score is a blend. Quite a pleasure to have been its receptacle. :P
