A malt bill heavy in Rye along with some Pale and Wheat malts, then soured on unmilled grain in the Berliner Weisse style making use of natural Lactobacillus. Once soured it is brought to a short boil with a small addition of Styrian Bobek and Sonnet hops. Finally conditioned on flame charred Padron chilli peppers. A one-off special made for our friends at The Hanging Bat, Edinburgh, for their 2nd Birthday. Many Happy Returns!

Keg at the hanging bat. Pours ugly dishwater grey, amber orange tinge, no head. Aromas of sourdough, rye bread, light fruity peppers. Taste has more sharp fruit and rye spice. Better than it looks!
