This blend of spontaneously fermented beer is aged on local raspberries. We begin brewing Coolship Red with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microbiota in the Maine air. After fermenting and aging in French oak wine barrels for over two years, we add raspberries and let it rest for an additional four to five months. The finished beer is bright red in color with an aroma of raspberry and oak. Its raspberry-forward flavor is balanced by notes of light funk, apricot, and a tart, dry finish.

@ Cantillon Quintessence. Red colour, white foam. Medium carbonation. Sour and complex fruity aroma of red fruit. Light sweetness, tart finish. Very good!

375 ml. bottle sampled @ Cantillon Quintessence 2014. About 1 year old if I remember correctly. Pour a clear copper pink with virtually no head. Nose is tart thinned, out touch acetic raspberries, reminiscent of an older Rosé De Gambrinus in both smell and taste, some lemon sour here as well with brett, little to no funk. Taste is a bit vinegar like, sour lemons, raspberry vinegar, brett, lots of pits, little funk, lingering acidity. Body is really thinned out. Quite a nice beer. This one really reminded me of an aged Rosé De Gambrinus, I tried a Rosé De Gambrinus after this one, I think that one was too young fro comparisons. Far fruitier than this one and bit more depth, preferable.

Bottle sample @ Cantillon Quintessence 2014. De couleur acajou sur un col léger blanc. Arôme offre le bouquet enivrant de framboises fraiches avec ce léger rétro-nasal de grains et de drêche. Le tout conserve un côté boisé sur des effluves légèrement épicées. Palais offre une belle palette de framboise avec ici un fruité généreux qui restitue parfaitement le profil terreux voire légèrement picotant. Note aigrelette et surette fruitée avec ici aussi ce fini rappelant le moût et un petite touche de grains. Autant dire que cela rivalise bien avec Cantillon.

Sample night of the great thirst. bright red, nose was sweet, tart and savory all at once. reminds me of a handful of crushed raspberries and lemon zest. taste was light and crisp. lemon, lime, juicy cherry and raspberry and tree fruit, very dry overzealous carbonation.

375mL bottle, sent from Gregg657 (thanks a lot, Pete), pours a cloudy dark amber / mahogany with a tiny quickly-dissipating head. Nose is super pungent, full of rich juicy raspberries, light tartness, moderate funk, and very light acidity. Flavour is super tart and fruity, much more tart than the nose suggests, with loads of mouth-puckering raspberries, moderate funk, some vinegary-ness, and medium acidity. Not as funky or barnyardy as the Coolship Cerise, but really well-structured. Finishes dry, tart and acidic. Excellent stuff.

Bottle at the source. Beautiful bright red color, slightly hazy, pink head with decent retention. Aroma of slightly musty cherries, blackberries, raspberries, subtle peach, tangerine. Taste is softly sour fruit, black pepper, dust, orange, lemon, dry and tangy finish. Very tasty.

Received in trade from mixylplik3, thanks for the opportunity Matt. Pours a deep cloudy garnet red with a smallish pink tinged head that quickly dissipates to a ring on top. I can smell the tart as soon as I wrangle the cork out of the bottle. Lots of tart raspberries with a hint of brown sugar make up the bulk of the aroma. Lactic acid and funk provide support. The flavor is filled with lactic and citric acid. Lots of tart berries and lemons with just a touch of brown sugar. Light bits of funk come and go in the taste cycle. Medium body with a moderate level of carbonation and a piercing light sugary tart mouthfeel. This is a very nice sour I quite enjoyed this.

Bottle @ Stephen’s house, courtesy of Lukaduke. You are my fucking hero. Pours a beautiful, bright dark pink appearance with a small, off white head. Super bright, raspberry seed, quite funky, huge zesty fruity, lemon citrusy, somewhat woody aroma. Super beautiful aroma. Fairly cheesy, incredibly enveloping rich fresh raspberry flavor that completely dominates my palate. This is a bit of acidity on the finish but super bright, fresh, and juicy raspberry flavor. Tons of funk, dust, and some cheese. Unbelievable stuff. Fuck yeah.
