This blend of spontaneously fermented beer is aged on local raspberries. We begin brewing Coolship Red with Pilsner malt, 40% raw wheat, and aged whole-leaf hops. The unfermented wort is then transferred to a large shallow pan called a coolship, which allows the hot wort to mingle with wild yeast and souring microbiota in the Maine air. After fermenting and aging in French oak wine barrels for over two years, we add raspberries and let it rest for an additional four to five months. The finished beer is bright red in color with an aroma of raspberry and oak. Its raspberry-forward flavor is balanced by notes of light funk, apricot, and a tart, dry finish.

Bottle @ Stephen’s house, courtesy of Lukaduke. You are my fucking hero. Pours a beautiful, bright dark pink appearance with a small, off white head. Super bright, raspberry seed, quite funky, huge zesty fruity, lemon citrusy, somewhat woody aroma. Super beautiful aroma. Fairly cheesy, incredibly enveloping rich fresh raspberry flavor that completely dominates my palate. This is a bit of acidity on the finish but super bright, fresh, and juicy raspberry flavor. Tons of funk, dust, and some cheese. Unbelievable stuff. Fuck yeah.

Poured from a 375ml bottle at the Lupulin Reunion 2012 at RFD DC. Damn, this looks sexy. Bright, neon red with some fluffy white head. Nose is big, strawberry, raspberry, grass, hay, grapefruit, lemon. Flavor is very tart, grapefruit, lemon, bright raspberry, young tart strawberry, sweet tarts, some lactic acid. Full bodied, bright, acidic finish. Really punchy acidity right now.

Muddy scarlet beer, the pink head having lived less than seconds, leaving spritzy pearling. Sour nose, fruity with sour cherries & other red berries; plus a liqueurish & matured-alcoholic feature. Sharp acidic & cherry-fruity flavour, bit woody and vinous. Hint at (fruitsugar)sweetness, but acidity too powerful. Acidburn, lipsmacking acidty, fruif-filled. Very nice sour fruitbeer, very little presence of Brettanomyces, the fruit dominating. Thanks to Mathieu!

Clear ruby red colour, deminishing white head. Tart raspberry aroma, fruity, wood. Quite sour, tart flavour, raspberry vinegar. Finish raspberry, wood and light vanilla. Nice.

Bottle shared by ltdan at the GABF Brewer’s afterparty. Pours with a koolaid red hue with a white head that lasts. Incredible funk aroma (deep and rich), lots of oak, barrel, berries (raspberry with some cherry hints), and a light grassy note. Flavors are very complex and very sour. Good acidity and lots of funk. Fruit notes (raspberries, cherries and some other esters). Bone dry with medium carbonation. Very good!

Bottle at Mes Tasting. Mostly clear pink pour with a soft, white head. Hugely tart aroma with strawberriesd and cherries. Lightly sweet and bitingly sour, a bit acidic and funky. Light to medium in body with fine though fizzy carbonation. Clean, tart finish, lip-puckering, with lingering berries. Really great stuff.

Bottle 375ml.Unclear medium red color with a small, frothy, fair lacing, mostly diminishing, off-white head. Aroma is moderate to light heay raspberry, fruity - berries, tart, barnyard, brett. Flavor is moderate to heavy sweet and acidic with a average to long duration. Body is medium, texture is oily, carbonation is soft. [20100624]
